  • You will use raw salmon. It doesn’t have to be pre-cooked! You can use any type of salmon, the better the salmon the better the taste. Would you like to use canned salmon? Go for plain salmon cakes.
  • A food processor is handy, but a knife works too! Stir the dough to get the right texture: or you can use a knife to chop it finely.
  • Refrigerate before cooking. Firming burgers for 15 minutes does wonders for texture.
  • Fry for 5 minutes on each side. Then it’s a quick pan in healthy olive oil. It will be slightly crispy on the outside and golden brown to perfection.

These salmon burgers use panko to hold them together. Not used to working with this ingredient? Here’s what you need to know:

  • Panko is a Japanese-style mix of breadcrumbs which is airier and lighter than conventional breadcrumbs. We like to use panko because it’s light, crunchy, and has a nice texture.
  • Need a replacement? You can use coarse breadcrumbs or homemade breadcrumbs.
  • Is that all you can find for regular breadcrumbs? Only use ½ cup panko instead of ¾ cup since regular breadcrumbs are very finely ground.

  • Look for gluten-free panko or breadcrumbs in store or online. It’s pretty easy to find these days!

Here’s the salmon burger recipe for you! They’re simple and have the best flavor: every bite is perfectly coated with tartar sauce.


  • 1 Pound salmon, remove skin and bones
  • ½ cup fresh parsley or cilantro
  • 1 tbsp capers, drained
  • ¼ teaspoon onion powder
  • ½ teaspoon kosher salt
  • ¾ cup Panko or coarse breadcrumbs (gluTen free if desired)*
  • 2 tablespoons Dijon mustard
  • 2 tablespoons mayonnaise
  • 3 tablespoons olive oil, for cooking
  • ½ cup Remoulade sauce or other salmon burger sauce (see above)
  • To serve: rolls, red onion, tomato, lettuce

  1. Cut the raw salmon into pieces. Place in a food processor along with the parsley or cilantro, capers, onion powder, and kosher salt. Pulse 8-10 times until coarsely chopped; Be careful not to over-treat. (Alternatively, use a large chef’s knife to shred everything until it has an even, coarsely chopped texture.) Remove the blade and stir in the panko, Dijon mustard, and mayonnaise (you can use this in a food processor or in a bowl).
  2. Shape the dough into 4 burger molds about ¾ inch thick. Place in fridge for 15 minutes to set texture (or up to 24 hours). While the burgers are resting, prepare the tartar sauce.
  3. When ready to cook, heat the olive oil in a skillet over medium-high heat. Add the burgers and cook until browned, 4-5 minutes. Then flip them and cook for another 4-5 minutes or until the inside reads 130 degrees Fahrenheit on a food thermometer. You can also grill the burgers over medium heat for the same amount of time.
  4. Serve on a bun with lettuce, tomatoes, red onions and tartar sauce or any other salmon burger sauce. Prepare and store: Refrigerate for up to 2 days or wrap in freezer safe packaging and freeze for up to 3 months. Thaw in the refrigerator the day before preparing.

Remarks

*If you can only find regular breadcrumbs, use ½ cup as it’s much finer than panko.
