We think so! What Makes the Best Roasted Vegetables? A colorful mix of vegetables, the perfect blend of spices and the right roasting time and temperature. Of course you can use any vegetables you like. Here’s what we chose for this recipe and why:

  1. Cauliflower and Broccoli: Tender and perfectly caramelized roasted cauliflower. Add a little broccoli for color, but since it can be a little bitter when fried, don’t overdo it.
  2. Sweet potato: Sweet potatoes bring a delicate sweetness to the pan and a bright orange color.

Frying vegetables is easy! While not fast, most are hands-free. Even better, that makes two plates full of veggies: enough for 8 people on the side! It’s also perfect for weekend meal prep and weekday dining! Here are the basic steps for roasting vegetables.

Step 1: Cut the vegetables.

This is the most time consuming part of the recipe! If you’re new to chopping, our Knife Skills 101 videos will show you exactly how to cut 20 fruits and vegetables. Here are the techniques you will need for this recipe:

  • How to cut cauliflower This is how you chop up florets perfectly: without chaos.
  • How to cut an onion Fast forward to the 1:30 method, then cut into 1/2-inch slices.
  • How to cut a pepper Use the method to cut 1/2 inch strips, then cut them in half.
  • How to cut a sweet potato Halve the potatoes lengthwise, then halve them lengthwise again. Then cut each quarter into pie-shaped slices.
How to Roast Vegetables

Step 2: Brush with olive oil, spices and salt.

This recipe yields two large baking sheets of roasted vegetables. Because there are so many veggies, place them on two parchment-lined baking sheets and toss with half the olive oil and the spices. Use your hands to mix them together and make sure everything is well coated!

Why use parchment paper to roast vegetables? It helps with cleaning! There are no hidden flavor differences here: just a cleaning aid. Avoid using silicone baking mats to roast vegetables! Baking Mats Make Softer Vegetables: We’ve found that parchment paper makes the crispiest veggies.

Step 3: Bake at 450 degrees, rotating pans halfway through. Don’t stir!

What is the ideal temperature for roasting vegetables? Cook on very high heat: 450 degrees Fahrenheit. This makes the vegetables crispy on the outside and tender on the inside. (They will be tender but not crispy and caramelized at a lower temperature.) Cook until tender: The vegetable mix for this recipe takes about 30 minutes.

Do you have to stir when frying? Not really! We’ve adapted this recipe so you don’t even have to stir it. All you have to do is rotate the plates after 20 minutes. This way the bottom of the vegetable will be perfectly golden.

What is Old Bay and what does it replace?

These roasted veggies have a touch of Old Bay spice to make them irresistibly delicious! But what is it? Old Bay is an American spice mix often used to flavor seafood: famous in shrimp broths like our Classic Shrimp Boil or our Leaf Shrimp Boil. The main ingredients of Old Bay are paprika, celery salt, black pepper and crushed red pepper flakes. You can find Old Bay in your grocery store in the condiments section or Buy Old Bay online.

What can replace Old Bay? If you can’t find any, use 2 tsp 1 tsp paprika powder and ¾ tsp for the ones listed in this recipe kosher salt. Add a few pinches of celery seeds if you have any: It adds that classic celery flavor.

The best ways to serve roasted vegetables

Once you’ve prepared these delicious roasted vegetables, there are so many ways to serve them! Here are a few things we love to do with this healthy veggie recipe:

  1. As a page. Of course, they make a great side dish! Serve with salmon, shrimp, chicken, meatloaf or pasta.
  2. In a grain bowl. Prepare a large pot of brown rice, quinoa or farro, then top with chickpeas, baby sprouts and our best tahini sauce.
  3. In the salad. Serve over greens with our Healthy Ranch Dressing.
  4. In a fancy sandwich. Toast bread, spread with goat cheese and add roasted vegetables. Drizzle with balsamic glaze for a bit of flair.
  5. Converse. Roasted vegetables are great for dinner parties or holiday meals like Thanksgiving or Christmas.

How to Roast Vegetables with the Best Spice Blend! This epic roast vegetable fills two baking sheets and takes 30 minutes to roast.


  • 1 medium cauliflower (2 Pound Sterling)*
  • 1 crown broccoli (1/2 A book)
  • 1 medium red onion
  • 2 medium sweet potatoes (1 1/2 Pound Sterling)
  • 1 Red pepper
  • 1 yellow peppers
  • 4 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons Old Bay Spice**
  • 1 teaspoon kosher salt

  1. Set oven racks to roast 2 trays. Preheat the oven to 450 degrees Fahrenheit.
  2. Cut vegetables: Cut the cauliflower and broccoli into florets. Cut the onion into 1/2 inch slices. Halve the sweet potato lengthwise, then halve lengthwise again, then slice each wedge into thin, pie-like slices (see photo). Cut the peppers into 1/2-inch strips, then cut the strips in half.
  3. Line two baking sheets with parchment paper (we prefer this over silicone baking mats as it results in crispier veggies). Spread the vegetables evenly on each sheet. Drizzle half the olive oil onto each sheet, then half the spices onto each sheet. Mix with hands until evenly coated.
  4. Place in the oven and cook for 20 minutes (do not stir!). Remove pans from oven, flip and bake an additional 10 minutes (30 minutes total) until tender and lightly browned on one side. Transfer to a bowl or serving platter and serve immediately.

Remarks

*Cut all amounts in half to make 1 baking sheet for 4 people.

** If you can’t find Old Bay, here’s how to make Old Bay out of it at home! Or substitute 1 tsp paprika and ½ tsp celery salt.
