How to make a ricotta pizza: the breakdown!

This ricotta pizza uses seasoned ricotta as the sauce, so it’s considered a white pizza. The ricotta adds a creamy texture and combines with the mozzarella and parmesan cheese to hold it all together. Here are the basic steps (or go straight to the recipe):

  • Make the pizza dough. Please see below for more information. Or you can also make a “cheat” pizza by using it as a topping for naan pizza or flatbread pizza.
  • Season the ricotta. Mix it with some salt, pepper and chopped garlic. This gives the ricotta a great flavor that can sometimes taste bland on its own.
  • Top with mozzarella and parmesan. These hold the pizza together and provide the right texture.
  • Make sure to garnish with basil after baking! Put it before cooking and it will brown in the oven.

  • ½ cup Whole milk ricotta cheese
  • ⅛ teaspoon kosher salt, to taste
  • Freshly ground black pepper
  • 1/2 small clove of garlic (¼ teaspoon chopped)
  • ½ cup grated mozzarella cheese
  • ¼ cup grated parmesan cheese
  • 1 Handful of canned artichoke hearts
  • 1 a handful of fresh basil leaves
  • 1 teaspoon honey or hot honey

  1. Prepare pizza dough: Follow the Best Pizza Dough or Thin Crust Dough recipe to prepare the dough. (It takes about 15 minutes and 45 minutes to rest.)
  2. Place a pizza stone in the oven and preheat to 500°F. OR preheat your pizza oven (this is the pizza oven we use).
  3. Preparation of the toppings: Chop the garlic. In a small bowl, mix the ricotta with the kosher salt, freshly ground pepper, and minced garlic. Remove the leaves from the artichoke hearts and chop.
  4. Bake pizza: When the oven is done, dust a pizza peel with corn or semolina flour. (If you don’t have a pizza peel, you can use a rimmed baking sheet or the back of a rimmed baking sheet. But a pizza peel is worth the investment!) Roll out the dough in a circle; For instructions, see How to stretch pizza dough. Then carefully place the dough on the pizza peel.
  5. Spread the seasoned ricotta over the dough. Garnish with mozzarella, parmesan, artichoke hearts and a pinch of kosher salt.
  6. Use the pizza peel to carefully transfer the pizza onto the preheated pizza stone. Bake the pizza until the cheese and crust are golden brown, about 5 to 7 minutes in the oven (or 1 minute in a pizza oven).
