What is a traditional aioli?

This pesto aioli is made in a non-traditional way with egg yolks, olive oil and a mortar and pestle. It’s a quicker, easier twist on the sauce with high-quality mayonnaise. (See the Traditional Aioli section above for why.) Here’s a quick and easy way to make these pesto aioli:
- In the food processorprocess garlic for a few seconds until chopped.
- Mixed in mayonnaise, basil, parmesan, garlic and lemon juice until a sauce forms. Done and done!
Aioli Storage
Store these pesto aioli in a covered container in the refrigerator. It’s at its best after 1 week, but you can store it for up to 2 weeks without losing flavor. The package below makes up a small amount so you’ll likely be browsing during that period.

- 1 medium clove of garlic
- 1 cup lightly packed fresh basil
- ½ cup grated parmesan cheese
- ½ tbsp fresh lemon juice
- ⅛ teaspoon kosher salt
- ½ cup high-quality mayonnaise
- In a food processor, mince the garlic until coarsely chopped.
- Add basil, parmesan, lemon juice, salt and mayonnaise. Mix until you get a smooth and creamy sauce. Store refrigerated for 2 weeks.
