  • 1 Medium head cauliflower (2 pounds or approx. 6 at Seven cups of stacked florets)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • ¾ teaspoon kosher salt, plus more to taste
  • 1/2 at 2/3 cup of grated Parmesan
  • For garnish: finely chopped Italian parsley (optional)

  1. Preheat the oven to 450 degrees Fahrenheit.
  2. Clean the cauliflower and cut into medium-sized florets. In a bowl, toss the cauliflower with the olive oil, garlic powder, oregano, and kosher salt.
  3. Line a baking sheet with parchment paper. Spread the cauliflower on a baking sheet and bake for about 20 minutes or until browned on the bottom (we used our bottom rack to brown more).
