This pizza recipe was born out of another “I never could” – I could never eat pizza without cheese. Yes, this pizza is so packed with flavor you won’t even notice it’s not there! Alex and I are huge (gigantic!) pizza lover. We mainly eat vegetarian food on a daily basis, so there is always a place for cheese at the table. The cheeseless pizza was over the top for us. But we are always willing to try new things.

This vegan pizza recipe – good news – has flavor unbelievable, no need for cheese! Mushroom and artichoke umami, our favorite tomatoes (fire-roasted Muir Glen Organic), a little fresh basil add up to a flavor explosion. The only downside is that the vegan pizza doesn’t stick as easily as the glue on a cheese pizza, so be careful of the toppings slipping off when you take a slice. But there is a small price to pay. Think of it as another I never could achievement.

How to make a good vegan pizza

Here are some tips for preparing the best vegan pizza recipe:

  • Vegetarian “meaty” fillings. Cheeseless pizza needs big flavors, especially in the umami department. (Umami is known as the “fifth flavor,” savory or meaty.) Mushrooms and artichoke hearts add great meaty flavor to veggie pizza toppings.
  • High quality pizza sauce. Since cheeseless pizza can’t outweigh the flavor with cheese, the tomatoes you use must add mega flavor. Fire-roasted tomatoes add a deliciously sweet flavor to our best pizza sauce, which takes just 5 minutes to make. You can also replace them with a very high quality marinara sauce.
  • Excellent pizza dough. You can’t hide a bad dough on a vegan pizza! Use the best quality dough: We recommend the main recipe for pizza dough or thin crust pizza dough.

To level up your pizza game you need two pizza making tools! While not mandatory, they are the best possible pizza.

  • pizza stone: By using a pizza stone, the dough is cooked at a very high temperature, resulting in a crispy exterior and a soft interior.
  • pizza shovel: If using a stone, you will need a pizza peel to release the dough from the stone. We recommend this Aluminum Peel or Super Peel.

  1. Prepare the dough with the best homemade pizza dough recipe (follow this video guide to learn more). Follow the preparation instructions in the dough recipe if making ahead of time.
  2. Place a pizza stone in the oven and preheat to 500°F. OR preheat your pizza oven (this is the pizza oven we use).
  3. Prepare the toppings: thinly slice the red peppers and set aside. Chop 3 cloves of garlic. Slice mushrooms and red onion. Drain and rinse the chickpeas. In a large pan, heat 2 tablespoons olive oil. Add garlic, mushrooms, onions, chickpeas and spinach and ½ tsp kosher salt; sauté until mushrooms are tender and spinach has wilted, about 5 minutes.
  4. When the oven is done, dust a pizza peel with corn or semolina flour. (If you don’t have a pizza peel, you can use a rimmed baking sheet or the back of a rimmed baking sheet. But a pizza peel is worth the investment!) Roll out the dough in a circle; For instructions, see How to stretch pizza dough. Then carefully place the dough on the pizza peel.
  5. Assemble pizza quickly: spread a thin layer of tomato passata over the dough and sprinkle with a few pinches of kosher salt. Add sautéed vegetables and garnish with strips of pepper and artichoke wedges.
  6. Slide the pizza into the oven on the pizza peel and bake until the crust is golden brown, about 5 to 7 minutes. While the pizza is baking, cut the basil into thin strips (chiffonnade). Allow to cool slightly, then garnish with basil and serve.
