How to prepare a summer meal in no time: roasted peppers and onions! Fire up your grill for the main event and toss those babies aside. This colorful vegetable makes an incredibly flavorful side dish—it’s tender, charred, smoky, and sweet all at once. Peppers and onions absolutely belong to Alex and me favourite Things to throw on the grill for summer meals. But we haven’t written the recipe yet! Here’s how to pair this treat well with any grilled dinner idea, whether it’s salmon, shrimp, tacos or portobello burgers.

Ingredients for roasted peppers and onions

The great thing about roasted peppers and onions is that they taste amazing with almost no seasoning! You don’t need fancy spice mixes for this. Just good old salt! Here’s what you need:

  • 3 peppers: We like to use Multicolor for a pop of color
  • Red onion
  • olive oil
  • Kosher salt

How to make roasted peppers and onions: in a grill basket

You will need a grill basket (or aluminum foil) for this method. Why? The onion in particular is so thin that it tends to fall through the grate if you put it directly on top. A grill basket holds all the vegetables together and heats them evenly. Here are some preparation tips (or go straight to the recipe):

  • make sure you Preheat the grill basket on the grill!
  • Cut in the peppers and onion thick ribbons: about 1½ inches thick. Brush with olive oil and season.
  • grill around 10 to 15 minutesuntil vegetables are charred and tender. Stir them several times to ensure even cooking. That’s it!

Use aluminum foil if you don’t have a grill basket!

Don’t have a grill basket? No problem. This is the grill basket we use if you have one on the market. Or you can make a makeshift grill basket out of aluminum foil! Here’s what to do:

  • Fold a large piece of aluminum foil in half and poke several holes in it with a fork.
  • Fold a 1 inch strip around the edge to make a makeshift tray. It’s not mandatory, but it makes sense to keep all the veggies in the bowl. Then you can use it like a grill basket!

Variations on Roasted Peppers and Onions

You can vary the seasoning of these Roasted Peppers and Onions however you like! They are wonderfully sweet and tender with no added spices. But the variations are endless! Here are a few ideas:

  • Cumin and Lime. Add a dash of cumin (¼ teaspoon) before grilling, then spritz with fresh lime juice.
  • Seasoning for tacos or seasoning for fajitas. Prepare them for a Mexican-style feast.
  • Cajun spice. do you like the heat Sprinkle with some Cajun seasoning before or after cooking.
  • Old Bay. Add great flavor with a little Old Bay spice.

  • 3 colorful peppers
  • 1 medium red onion
  • 1 tbsp olive oil
  • ¼ teaspoon kosher salt

  1. Preheat a grill to medium-high heat (375 to 450 degrees). If you are using the grill basket, place it on the grill while it is preheating. Or fold a large piece of aluminum foil in half and poke several holes in it with a fork, then fold a 1-inch border around the edge to make a makeshift tray.
  2. Cut the peppers into strips 1 1/2 cm wide. Cut the onion into wide strips and separate the layers with your fingers. Place them in a bowl and toss with the olive oil and kosher salt.
  3. Grill in the grill basket or aluminum tray for 15-20 minutes until tender, turning the vegetables a few times to ensure even cooking.
