When it comes to grilling veggies, we’ve tried them all. (Almost.) And this vegetable surprised us: roasted green beans! Turns out the grill is the perfect way to cook up these summer greens. Take a bite and it’s tender, with an explosion of sweet, spicy, salty, and charred flavors. Honestly, they’re just as addicting as fries! We quickly scanned a tray and then asked ourselves, why don’t we make roasted green beans more often? They are now part of our repertoire: and we hope you will add them to yours too.

A quick way to prune green beans
The only tricky part about making green beans is the trimming! For some reason, this is one of the least exciting prep steps I find (I don’t know why). But Alex and I came up with a quick way to trim green beans that makes it bearable: so you don’t have to spend hours resolving the ups and downs. Here’s the quick way to prune green beans:
- Take about 15-20 beans and then put them on the cutting board. Work quickly and make an even stack with everyone lined up lengthwise. They don’t all have to be aligned the same way!
- Line up all ends against the edge of your knife. Then take them with one hand and cut off the ends with a knife.
- Quickly flip the beans the other way, then slide them toward the blade of your knife so the other ends line up. Then grab the stack and cut off the other ends.

Tips for grilling green beans
The little extra of grilled green beans: you can put them directly on the grates! A grill basket is not required. If you have a grill basket, you can use that too – it just results in fewer charred green beans. Our favorite method is grids: we love tank markings! Here are the basic steps (or jump to the recipe below):
- Preheat grill to medium-high heat. It’s 375 to 450 degrees Fahrenheit.
- Cut the green beans as above, then toss with olive oil, salt and pepper.
- Grill on the grills for 5 minutes on each side. Turn with a spatula and grill until tender and charred! Drizzle with fresh lemon juice and enjoy.
