Grilled carrots are the perfect easy side dish! These are perfectly charred and flavored with cumin and a squeeze of fresh lime juice.

Our new grill has been the source of a lot of inspiration this summer, from grilling veggie burgers to paella to grilled Caesar salad. So when we found a bag of carrots at the bottom of the freshness drawer of our fridge, we knew exactly what to do with them: throw them on the grill! As expected, the grilling brought out a nice sweet flavor in the carrots. (There doesn’t seem to be much the Grill can’t improve on!). Mixed with lime juice, coriander, and cumin, these healthy veggies were a great treat! We ate them as an appetizer as they were perfect for appetizers but they would also be perfect as a side dish. Here’s how to make them!

Ingredients for grilled carrots

This healthy roasted carrot recipe only requires a handful of ingredients! Here’s what you need:

  • carrots (either large carrots that you can cut into wedges or thin carrots)
  • lime
  • Fresh coriander
  • cumin
  • olive oil, salt and pepper

Lime juice and cilantro are key in this recipe, as the fresh flavors liven up the grilled carrots. If possible, buy a real lime instead of the bottled juice. It really makes a difference!

The thinner the better with grilled carrots!

Here’s an important thing about roasted carrots: Keep them as thin as possible so they cook well. So if you buy one of those bags of big carrots from the store, you have to cut them into quarters (or even smaller ones). If they are too thick, the carrots will darken on the outside while remaining raw in the center. Another popular option is to boil or steam the carrots (like we do with this grilled cauliflower) before grilling. But Alex and I wanted to keep this recipe quick and easy: so cutting them into thin pieces works!

Another alternative: Look for small and thin carrots sold in bunches at the farmer’s market or the organic section of the grocery store. You’ll often see rainbow carrots being sold this way! If they are long and thin, they are perfect for grilling.

What takes the most time with roasted carrots is the prep time! Once you slice them into wedges and preheat the grill, it’s all downhill from there. Here are the basic steps:

  • Preheat a grill to medium heat (about 425 degrees).
  • Toss the sliced ​​carrots with olive oil and salt.
  • Place the carrots directly on the grill and cook until tender, 6 to 10 minutes. Turn carrots only once so they cook evenly; They may turn over when they become slightly pale and wrinkled.
  • Once cooked, toss the carrots with the lime juice and cumin and enjoy right away!

  • 1 1/2 Mash large carrots quartered lengthways or small thin carrots
  • 1 tbsp olive oil
  • ½ teaspoon kosher salt, plus more to taste
  • 1 tbsp chopped coriander
  • 1/2 lime
  • ¼ teaspoon cumin
  • Freshly ground black pepper

  1. Preheat a grill to medium-high heat (375 to 450 degrees).
  2. Peel the carrots and cut into wedges if large, or in half if medium to small (the thinner the better!).
  3. Place the carrots in a bowl and toss with the olive oil and kosher salt.
  4. Place the carrots directly on the grill grate and grill for 6-10 minutes, turning once.
  5. Roughly chop the coriander.
  6. When the carrots are cooked, place them in a bowl and toss with the juice of ½ lime, cumin, coriander, a few pinches of kosher salt, and freshly ground black pepper.
