Here’s how: mix it up!

Yes, all you have to do here is blend all the ingredients in a blender. That’s it! The blender grinds the oats into oatmeal, turning it all into a smooth, creamy pancake batter. There is only one thing you should know about using this paste:

  • Let the dough rest for 5 minutes to thicken. Yes, set a timer and let it sit. Don’t be tempted to use it early! During this time the batter will become very thick: resulting in a fluffier pancake.
  • For the second serving, stir in 1 tablespoon of milk. The thing is, this batter will get even thicker the more you cook the first batch! So just add 1 tablespoon of milk to the rest of the dough before baking. It works like a charm.

The key to cooking gluten-free pancakes: slow and slow

We’ve said it once and we’ll say it again: Bake your pancakes on low heat! Why? So many home cooks make the mistake of turning the heat up too high. The result is pancakes that are black on the outside and raw on the inside.

Nobody likes that! Set your heat to low (or medium-low if you dare!). Then wait to flip the pancakes until bubbles form on the surface and begin to burst. It will take longer than you think: but wait! It’s worth it for the perfectly cooked pancakes.
