Our 4 year old had the idea of ​​making strawberry muffins (brilliant!) so we tried our favorite pumpkin muffin. It turns out this one is even better than the original!

  • Strawberries are incorporated into a cream cheese strudel. This way the berries will fit into a creamy filling and leave the bottom of the muffin perfectly moist. Man, is that delicious!
  • The muffins are just sweet enough. Many muffins are glorified cupcakes: they’re just sweet enough to be rightly called muffins.
  • They’re moist with applesauce! Applesauce makes a perfectly moist cake serving of the muffin without being too buttery or greasy.

How to make cream cheese filling and swirl

These strawberry muffins are pretty simple: the only part that needs a little more explaining is the cream cheese strudel. Here’s what you need to know about this part of the recipe:

  • Cut the strawberries into small pieces. This will help the strawberries integrate with the cream cheese – it will turn pink but still have strawberry bits (that’s expected!).
  • Spoon cream cheese onto the muffin batter by the spoonful. Use a large tablespoon.
  • Use a toothpick to swirl the cheese and press into the batter. Stir it around so it fits on top of the muffin batter.

Since there’s cream cheese on top, these strawberry muffins should be stored in the fridge rather than at room temperature like other muffins. Here are some hints:

  • Muffins taste best the day they are baked. After cooking, wait for them to reach room temperature, then devour. They taste fantastic during the day.
  • Refrigerate for 5 days. Put them in the fridge to store them. Remember to let them come to room temperature for a minute or two before enjoying.
  • Do not freeze. The cream cheese filling doesn’t hold up well in the freezer, so we don’t recommend freezing it here.

  • 1 ½ cups all purpose flour
  • ½ cup old-fashioned oatmeal
  • ½ cup light brown sugar
  • ½ teaspoon Cinammon
  • 2 teaspoons baking powder
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • 1 ½ cups unsweetened applesauce
  • ¼ cup neutral oil
  • 1 tbsp vanilla extract
  • 8 ounces Cream cheese, softened
  • 3 tablespoons granulated sugar
  • 1 cup diced strawberries

  1. Preheat the oven to 350 degrees Fahrenheit. Place 12 muffin cases in a regular muffin tin.
  2. In a medium bowl, combine the all-purpose flour, rolled oats, brown sugar, and cinnamon with the baking powder, baking soda, and kosher salt.
  3. In another bowl, mix applesauce, neutral oil, and vanilla extract. Wait until you’ve made the cream cheese filling before adding to the dry.
  4. Wash strawberries and cut into small pieces. Use a stand mixer fitted with a paddle attachment or an electric hand mixer to combine the cream cheese, sugar and strawberries: beat on medium speed until fully combined (the cheese will turn pink but will still have strawberry bits).
  5. Combine the wet ingredients (applesauce, oil, and vanilla) in the bowl with the dry ingredients (flour, oats, etc.) and stir until a smooth paste forms.
  6. Divide the batter evenly among the 12 muffin cups. Place a tablespoon of strawberry cream cheese in the center of each muffin. Then, use a toothpick to toss the cream cheese until smooth and partially incorporated into the batter (see photos).
  7. Bake until a toothpick comes out clean when inserted into the muffin portion, about 25 to 28 minutes. Allow to cool in the pan for 5 minutes, then remove the muffins and place on a cooling rack. Cool to room temperature for 1 hour. Enjoy for up to 1 week or refrigerate (these muffins don’t freeze well).
