This vegan lentil soup is packed with flavor despite being made entirely of plants. While some recipes rely on bacon or sausage to keep eaters coming back, this one doesn’t require meat or dairy. Even our 2 year old was obsessed with this healthy recipe! Here are the tips for preparing an irresistible lentil soup:

Tip 1: Sautéed fennel brings a flavor nuance.

Using fresh fennel with the standard onion gives this soup a smoky, nuanced undertone. Fresh fennel can be found in the produce section of traditional grocery stores: it looks like a large onion with a fluffy tip. If you don’t know how to chop this vegetable at home, here’s how to chop fennel.

Tip 2: Fire roasted tomatoes give a tomato sweetness.

What makes this the best lentil soup? Let’s just say everyone we’ve served it to immediately asks for the recipe…and the desserts.


  • 1 medium yellow onion
  • 1 head of fennel
  • 2 big carrots
  • 1 clove of garlic
  • ¼ cup olive oil
  • 1 ½ cups dried brown or green lentils
  • 281 ounce fire roasted diced tomatoes
  • 1 liter vegetable soup
  • 1 cup the water
  • 1 teaspoon kosher salt
  • 1 tbsp paprika
  • 1 tbsp dried oregano
  • 3 cups baby spinach (or regular chopped spinach)

  1. Chop the onion. Dice the fennel. Peel and cut carrots. Grate the garlic and set aside to incorporate once the soup is cooked. (Have an Instant Pot? Go to Instant Pot Lentil Soup and skip to step 2!)
  2. In a large saucepan, heat the olive oil over medium-high heat. Add the onion and fennel and sauté for 6-7 minutes until translucent. Add the carrots, lentils, tomatoes, broth, water, salt, paprika, and oregano.
  3. Bring to a boil. Simmer for 22 to 25 minutes until the lentils are tender.
  4. Stir in the spinach and grated garlic and let stand 5 minutes before serving. Taste and season with salt and freshly ground pepper if needed. Serve immediately. Keeps up to 4 days in the fridge and 3-4 months in the freezer.
