  • Oatmeal: Oatmeal is nut-free and gluten-free, and it works here too. Edible cookie dough made with oatmeal can have a firmer texture, so we recommend starting with ¾ cup oatmeal and adding more until desired texture is achieved.

Small portions are essential

  • 2 at 4 tbsp milk of your choice
  • ⅓ cup dark chocolate chips

  1. All-purpose flour for heat treatment (skip if using almond or oat flour): If you use all-purpose flour, treat it with heat to prevent bacterial growth. Preheat the oven to 300 degrees Fahrenheit. Place the flour on a baking sheet and bake 4 to 6 minutes until the temperature reaches 165 degrees Fahrenheit, checking with a food thermometer every few minutes. Allow to cool completely before using (patience: if the flour is hot, the texture of the cookie dough will suffer).
  2. Mix butter and sugar: Soften the butter in the microwave for about 10 seconds until just soft. Mash with the brown sugar with a fork until fully incorporated.

Remarks

*Flavour and texture are best with all-purpose flour (see above). For gluten-free flour, almond flour has the best texture and you don’t need to heat treat it. You can also use nut-free oatmeal, which doesn’t need to be heat treated. Oatmeal makes the texture of the dough a bit stiffer, so try adding about ¾ cup to 1 cup until you get the texture you want.
