But look further and you’ll start to notice the heavy hitters of Cajun cooking: peppers, garlic, onion, cumin, and of course, cayenne pepper for spiciness! Here are the ingredients you will need to prepare and that you may already have on hand:

You won’t see fennel seeds in every cooked version of the Cajun seasoning. But we came across it a few times during our research. (So ​​much so that we use fennel seeds to make our vegan cookies and sauces and many other vegan recipes.)

  • 2 tablespoons paprika
  • 2 tablespoons garlic powder
  • 1 tbsp onion powder
  • 1 teaspoon dried thyme leaves (unground)
  • 1 teaspoon fennel seeds (optional)
  • 1 teaspoon cumin
  • 1/2 at 1 teaspoon* of cayenne pepper, depending on spice tolerance
  • 1 teaspoon black pepper
  • 1 teaspoon kosher salt

  1. Whisk the ingredients together in a small bowl. Transfer to an airtight container or jar. Store in a cool, dry place for 6 months to 1 year.

Remarks

* ½ tsp cayenne pepper gives a flavorful mix (remember black pepper also needs to be added for spiciness). 1 teaspoon will knock your socks off!
