This Easy Blueberry Crisp is a recipe from the book that reinforces the centuries-old tradition of crisps with nutrient-dense whole foods. Oh and it tastes good unbelievable.

This easy blueberry crisp is everything: It’s easy to make, it’s healthy and it’s so good. Here is the distribution of this delicious summer dessert:

  • The crumble is perfectly crunchy: and gluten-free! The filling here is crunchy and made with almonds and oats: making it a naturally gluten-free dessert.
  • He has a healthy rotation. The filling tastes like eating pure blueberries. And guess what: there’s no sugar in the filling! The crunchy topping only has ½ cup of sugar, but it’s the perfect amount of sweetness: just enough to make the blueberries sparkle.
  • Add lavender to take it on top! It’s optional, but adding a little crushed culinary lavender takes it to a whole new level. You can usually find lavender in the spice section of your grocery store, at a specialty spice store, or online.

How do you make blueberries crispy? Or blueberry crumble because they are so similar! Fries and crumbs are an age-old tradition, but this one has a modern twist.

  • make filling: To make the blueberry filling, simply mix the blueberries with arrowroot powder for thickening, vanilla, and lemon juice.
  • Prepare crumble: The filling is a mixture of almond flour, butter, rolled oats, and sugar that combine to create the perfect crumbly texture. Although the blueberry topping doesn’t contain any sugar, the streusel topping adds just the right amount of sweetness to the tart berries. And that lavender… well, you just have to try it!
  • Spread and bake! Spread the filling on top and bake for 45 minutes.
  • Cool. It is important to let it cool for at least 15 minutes so that the filling can set!

This Best Blueberry Crisp is easy to make and tastes so good. The crumble topping is perfectly crunchy and the filling is pure tart blueberry!


For the filling

  • 5 cups fresh blueberries
  • 1 tbsp vanilla extract
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons Arrowroot powder or cornstarch
  • ¼ teaspoon kosher salt

For garnish

  • 5 tablespoons cold unsalted butter (or vegan butter or refined coconut oil)
  • 1 cup oatmeal
  • ½ cup coconut sugar or granulated sugar
  • ½ cup almond powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon kosher salt
  • 1 teaspoon Culinary lavender, crushed under the bottom of a glass until powdery (optional)*

  1. Preheat the oven to 350F. Lightly grease an 8-inch pie plate or cast-iron skillet.
  2. Prepare the filling: In a large bowl, mix together the blueberries, vanilla, lemon juice, arrowroot, and salt until well coated. Transfer the filling to the prepared cake pan.
  3. Prepare the filling: wipe out the bowl, cut the butter into small pieces and add to the bowl along with the oat flakes, coconut blossom sugar, almond flour, vanilla, salt and lavender. Squeeze everything together with your fingertips until it forms a shaggy, sandy dough. Sprinkle the filling evenly over the filling.
  4. Bake for about 45 minutes or until topping is bubbly and topping is golden brown. Leave to cool for at least 15 minutes.

Remarks

*The lavender is optional, but it really enhances the dish!
