What’s so great about these mixer muffins?

Why make muffins in a blender instead of mixing the batter in a bowl? Well, number 1 is just more fun! For some reason he feels easier to make muffins in a blender: Maybe because all the mess is contained in one place? Or you don’t have to mess up 2 bowls and spoons? Either way, all you have to do is add all the ingredients to the blender and puree.

Another great thing about these mixer muffins is that You don’t need flour: just oatmeal! Mixing the oatmeal into the batter essentially turns it into oatmeal on the spot. Alex and I have a high speed blender (we use this Vitamix blender) and it works wonders for these blender muffins. They glow in seconds! But of course any kind of mixer is also possible.

This version of our best mixer muffins is banana: it has a strong banana flavor and is lightly flavored with cinnamon and allspice. It basically tastes like banana bread in muffin form! After this recipe was first published, it became very popular among readers. So we created a number of different flavors that tie into the theme! Here are some of our mixer muffin variations:

  • Blueberry Banana Muffins: These muffins are similar to the basic recipe but add fresh blueberries for a flavorful kick! They are also topped with turbinado sugar.

The description

These mixer muffins are so easy to make and fluffy without flour! They make a fantastic, healthy, ready-to-eat breakfast or snack. For more mixer muffin flavors, check out Healthy Blueberry Muffins and Apple Zucchini Muffins.


  • 3 large very ripe bananas (1 ½ cups mashed)
  • 2 Big Eggs
  • 2 cups Oatmeal and more for garnish
  • ¼ cup neutral oil (sunflower, vegetable or grape seed oil)**
  • ¼ cup pure maple syrup
  • 1 tbsp pure vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking powder
  • 1 teaspoon Cinammon
  • ½ teaspoon allspice (optional)
  • ¼ teaspoon kosher salt

  1. Preheat the oven to 350F.
  2. Place all the ingredients in a blender, breaking the bananas into chunks as you add them. Mix everything together over high heat for a minute or two until a smooth paste forms.
  3. Place 9-10 muffin cases in the muffin liners and pour evenly divided batter between the muffin liners; The amount of muffins depends on the size of the bananas and the type of oats. Sprinkle with additional oatmeal and press down lightly.
  4. Bake until a toothpick comes out clean, about 25 to 35 minutes. Remove from the muffin tin and let cool for a few minutes before serving. Store chilled or frozen.
