The vibrant purple color makes it stand out in the glass. Add a salt rim and it’s great.

What’s in a Beet Margarita?

The margarita is a classic cocktail invented in Mexico in the 1930s and remains one of the most popular cocktails of all time. A classic margarita only has 3 ingredients: tequila, triple sec, and lime juice. The Beet Margarita adds both beet juice and orange for zesty flavor and brilliant color. Here’s what you need:

  • white tequila: The unaged tequila here gives a simple taste; Replace Reposado with notes of vanilla and oak
  • beet juice: find a glass in the store. V8 also makes a lemon ginger beet juice that would be great here.
  • Orange juice: Beetroot and orange are a classic pairing
  • Triple Sec or Cointreau: either work! Cointreau has a more refined finish
  • lime juice: Freshly squeezed
  • Simple Syrup: it balances the acidity of the juices
  • Kosher salt or flaky salt for the rim

As you know, a margarita is not a salt-rimmed margarita (or is it?). This beet margarita is best served with a salt rim to bring out the flavors of the drink. Even better: add a few blocks of clear ice! Here are some presentation tips:

  • Use kosher salt or sea salt flakes (not table salt!). These types of salt are coarse and give the right texture around the edge. Even better? Use pink sea salt for another rosy hue to accompany the beets.

Want to serve beetroot margaritas for a party? What better way than having every drink made to order. Combine these ingredients in a pitcher:

  • 1 1/2 cups of tequila
  • 1 cup beet juice
  • 1 cup orange juice
  • ½ cup Cointreau or Triple Sec
  • ½ cup lime juice
  • ½ cup simple syrup
  • 3 handfuls of ice cubes

Mix and you have 8 glasses in 5 minutes! Be sure to add the right amount of ice cubes: this will dilute the drinks just enough.

  • 1½ ounce* White tequila
  • 1 ounce beet juice
  • 1 ounce fresh pressed orange juice
  • ½ ounce Triple Sec (or Cointreau)
  • ½ ounce fresh lime juice
  • ½ ounce simple syrup
  • Kosher salt or sea salt flakes for the rim
  • Clear ice for serving

  1. Cut a notch in a lime wedge, then brush the lime over the rim of a glass. Dip the edge of the brim in a plate of salt.
  2. Pour all ingredients into a shaker with 4 ice cubes and shake cold.
  3. Strain the margarita into the glass with the salt rim. Fill the glass with clear ice and serve.
  4. Pitcher (8 servings): In a pitcher, combine 1 ½ cup tequila, 1 cup beet juice, 1 cup orange juice, ½ cup Cointreau or Triple Sec, ½ cup lime juice, and ½ cup simple syrup. Add 3 handfuls of ice and stir until cool.
