You can order everything online these days, from toilet paper to peanut butter to dog treats. We love supporting local businesses; We spend time at farmers markets and local shops. But for weekday dinners and tedious errands like toilet paper, it’s an online order. There really is nothing quite like getting groceries on my doorstep (apart from the incessant barking of the dog) and I marvel at it every time. These grocery bags on my doorstep are the physical representation of the hours reclaimed from my day.

Instead of putting 2-month-old Larson in his car seat, driving to the grocery store, maneuvering a stray shopping cart down the aisles, standing in line, paying at the register, maneuvering the cart to my car, with bags and the Juggling car seats… I just open the door and pull out the bags. Instead of spending time shopping, I can use it to plan meals and cook for my loved ones. genius. For this meal, we ordered the ingredients for these very easy BBQ Bean Tacos with Pineapple Salsa. We were then able to make this bean taco recipe in about 20 minutes! If that’s not smooth, I don’t know what is.

When we order groceries online, the first thing we do is make a precise list of what to put in our shopping cart. For these BBQ Bean Tacos we had to order:

  • 2 cans pinto beans (15 ounces)
  • 20 ounce pineapple chunks packed in juice
  • Red onion
  • Fresh coriander
  • 1 small kale
  • radish
  • 1 lime

How to make BBQ Bean Tacos with Pineapple Salsa

These BBQ Bean Tacos with Pineapple Salsa are pretty close to our perfect meal. They combine the tangy brightness of pineapple salsa with the meaty flavor of grilled pinto beans. Even better, it takes less than 30 minutes to make! This is a quick and easy weeknight dinner recipe that’s a win. In this case, the timing depends on how fast you can hack. If you recruit a helper (like a spouse or friend), the preparation time will go even faster. You could probably make these BBQ bean tacos in 15 minutes with several helpers in the kitchen!

The main ingredient in these grilled bean tacos is the pineapple salsa. For this recipe, we found that using canned pineapples for the pineapple salsa is better than fresh pineapples. The canned pineapple had just the right amount of spiciness for the salsa (although we also have fresh pineapple salsa if you’re interested!) Preparing the pineapple salsa requires a bit of chopping, but it’s really the only prep step. The BBQ beans will only simmer a little as long as you need to shred the salsa.

One of our favorite tricks for topping tacos is grilling the tortillas over an open flame. Be careful while doing this to make sure the tortilla doesn’t burn, but you’ll find that it not only warms the tacos but also adds a slightly charred flavor. These Plant-Based BBQ Bean Tacos with Pineapple Salsa are a delicious, quick and easy dinner recipe! They’ll be on the table in less than 30 minutes.


  • 2 15 ounce cans of pinto beans
  • 2 tablespoons Dijon mustard
  • 1 tbsp maple syrup
  • ¾ cup Organic ketchup (or with natural sugar)
  • ½ teaspoon garlic powder
  • ½ teaspoon chilli powder
  • ¾ teaspoon kosher salt, shared
  • 20-Ounce can (1½ cups) pineapple chunks packed in juice* (or substitute mango salsa)
  • ¼ cup chopped red onion
  • ¼ cup finely chopped cilantro plus extra for garnish
  • 1 small kale
  • 3 radish
  • 1 Lime (corners for squeezing)
  • Tortillas for serving

  1. Drain both cans of beans (no rinsing necessary). In a large skillet, combine beans, mustard, maple syrup, ketchup, garlic powder, chili powder, and ½ tsp kosher salt. Heat over low heat until thickened and hot while you prepare the rest of the recipe.
  2. Drain pineapple and chop finely. Slice the red onion and chop the coriander. Mix pineapple, red onion and cilantro with ¼ teaspoon kosher salt.
  3. Finely chop the kale and radishes. Cut the lime into wedges.
  4. Char the tortillas, if desired, by placing them over an open gas flame over medium-high heat for a few seconds on each side, turning with tongs until lightly charred and warmed through.
  5. To serve, place the beans in a tortilla, then add the cabbage, radishes, and a squeeze of lime (important, don’t omit!). Garnish with pineapple salsa and additional cilantro, if desired.

Remarks

*Note: For pineapples, we’ve found that cans work best. We have tried whole, hollowed and peeled pineapples sold packaged in some grocery stores and it was a bit too sweet for our liking; Canned pineapple has a sour edge that contrasts nicely with the salsa.
