We love summer. Lazy mornings at the farmers market, meandering bike rides, car rides to visit my dear family, strawberry shortcake, frozen lemonade… we loved every minute of it. Our summer was a little interrupted by an unplanned renovation of the house, but it was a pleasant surprise. Our conversations now turn to choosing flooring and countertop materials, as well as details I never knew or dreamed of (1/8-inch grout between tiles? Undermount sinks? Partial overlay cabinets?). Speaking of road trips, we had a lovely one in Minnesota last weekend while visiting family and friends. We had a truly amazing brunch with Lindsay and Björk from Pinch of Yum, one of those meals where every component is so well thought out and utterly delicious you won’t want to end, followed by a lazy summer cold pressed coffee and cherries with Sarah from Vanilla Bean Blog and her really cute family. I know it’s said often, but People who love food are the best. To the right?

Either way, here’s a recipe to enjoy summer with your loved ones: these easy and healthy strawberry popsicles! The recipe features one of our favorite ingredients – Greek yogurt, which adds the creaminess of popsicles. We’ve been using Greek yogurt for everything from strawberry shortcake to ranch dip lately. Refreshing and delicious, these strawberry popsicles are naturally sweetened with maple syrup or honey. For a little extra flair, we added some basil from our garden for a little pop. This easy and healthy strawberry popsicle is made with Greek yogurt to make it creamy, maple syrup and fresh basil for a flavor boost.


  • 1 pint (2 cups) strawberries
  • ⅓ cup maple syrup or honey
  • 1 teaspoon balsamic vinegar
  • 1 cup greek yogurt
  • ten basil leaves

  1. Wash and roughly chop the strawberries. In a bowl, mix the strawberries with ⅓ cup honey and 1 teaspoon balsamic vinegar and let steep for 15 minutes.
  2. Using a blender or immersion blender, puree strawberries with 1 cup Greek yogurt and 10 basil leaves until well combined.
  3. Pour the mixture into popsicle molds and freeze until set, about 4 hours.
