Here’s the ideal breakfast recipe that’s healthy, easy, and full of irresistible flavors. In fact, we’re crazy about it: Banana Baked Oats! Healthy and filling, this incredible recipe is made with wholesome ingredients: mostly oats and bananas. It happens to be vegan baked oatmeal, but it appeals to everyone. Serve it to your guests, or better yet, make a big pot and eat it all week! You can also cut it into “bars” for quick snacks. Topped with some nut butter and banana slices, it’s a healthy and decadent treat.

A few ripe bananas on our counter inspired this recipe. What to do with very ripe bananas? Most of the recipes are banana bread or banana muffins… in short, have fun! We wanted something healthy that would work for a meal. So we decided to make a vegan version of our healthy banana-based baked oatmeal. My god, did it turn out delicious! It’s quickly risen to the top of our favorite easy breakfast recipes. The ingredients for Baked Banana Oatmeal are:

  • Oatmeal or old fashioned: Do not substitute steel rolled oats as they have a very different texture! Go for Baked Steel Cut Oatmeal instead.
  • ripe bananas: Make sure they are ripe! This is essential for this recipe.
  • pitchnut pieces or other nuts like walnuts or almonds
  • Cinnamon, allspice and vanilla
  • baking powder
  • milk (your favorite non-dairy milk)
  • maple syrup

Banana replaces egg (and makes it vegan)

Here’s the funny thing: Typically, a baked oatmeal recipe calls for eggs to bind the texture. But if you use mashed bananas, they act as a binder! In fact, bananas are a common vegan egg substitute in baking recipes. You can also use this formula in other baked goods: substitute 1 mashed ripe banana for 1 egg.

The other thing the mashed banana does here: it adds a great banana flavor! So it doesn’t matter what your food preferences are. This Banana Baked Oatmeal is packed with a deliciously sweet banana flavor and offers the perfect texture.

Milk types for baked oats

You can use any type of milk you like for this recipe! If you want to turn it into an all-vegan oatmeal, use your favorite plant-based milk. Here are some options:

  • oat milk: Oat milk is becoming a popular and easy-to-find plant-based milk. Be sure to use unsweetened and unflavored.
  • Almond milk: Almond milk is another popular choice.
  • 2% milk: If you don’t care about being fully vegan, use 2%.
  • Avoid coconut milk, as it can add a strong coconut flavor. Soy milk is an option, but we don’t use it often in our kitchen.

Baked Banana Oatmeal Toppings

There are so many ways to top baked oatmeal! This Baked Banana Oatmeal is a super healthy breakfast: it’s vegan, oil-free, and relatively low in sugar. That’s why we like to keep our toppings healthy! Here’s how we overcame it, and some other ideas:

  • Nut Butter and Bananas: Mix together almond butter and peanut butter, then top with banana slices. Use nut-free sunflower butter.
  • maple syrup: A dash of maple syrup is all you need for a little sparkle.
  • Blueberry Dessert: Try the topping with blueberry compote (also vegan).
  • PB&J: Why not add a peanut butter and strawberry jam swirl?

Make-ahead instructions for baked oatmeal

With this vegan baked oatmeal recipe, keep in mind: there really isn’t a good ahead-time option. Don’t prep the whole mold ahead of time and refrigerate it overnight! Overnight Oats demand it, but don’t try it here. The problem? The oats will soak up all the liquid and be way too dry. Here are two preparation options:

  • Minimum preparation: You can mix the wet and dry separately and store in separate containers (along with the wet in the fridge), then pour them together in the morning and bake. It takes another 45 minutes to cook. We prefer this variant…
  • Bake before: Make a casserole on a Sunday night, then pop it in the fridge to eat all week long. You can store leftovers in the fridge for up to 1 week and reheat in a 300 degree oven or microwave. Or eat them fresh out of the fridge like we did!

  • 2 cups oatmeal
  • ½ cup Pecan chunks (optional)
  • 1 teaspoon baking powder
  • 1½ teaspoons Cinammon
  • ½ teaspoon pimento
  • ½ teaspoon kosher salt
  • ¾ cup mashed banana or 2 very ripe bananas
  • 1 ¾ cups Milk of your choice (milk, almond or oat)
  • ¼ cup pure maple syrup
  • 1 tbsp pure vanilla extract
  • To serve: banana slices, almond butter or peanut butter

  1. Preheat oven to 375 degrees Fahrenheit.*
  2. Grease an 8 x 8″ or 9 x 9″ skillet with coconut oil or a neutral oil. In a medium bowl, combine oatmeal, pecan chunks, baking soda, cinnamon, allspice, and kosher salt.
  3. Empty the cookies into the prepared pan.
  4. Mash bananas. In the same bowl, whisk together the bananas, milk, maple syrup, and vanilla. Pour the milk mixture over the oatmeal. Stir gently with a fork to incorporate everything well.
  5. Bake for 40 to 45 minutes until the top is golden brown and the oat mixture is set. Remove from the oven and let cool for at least 10 minutes (or longer for the texture to fully set).
  6. Before serving, brush the top with almond butter or peanut butter (or a combination) and garnish with banana slices. Store leftovers in the fridge for up to 1 week: heat in a 300-degree oven or in the microwave until warmed through.

Remarks

*Prep Notes: Do not prepare the whole skillet ahead of time and refrigerate overnight as the oats will absorb all of the liquid. You can mix the wet and dry separately and store in separate containers (along with the wet in the fridge), then pour them together in the morning and bake.
