In 2010 Alex and I started a food blog called A Couple Cooks. We had no plans for it other than as an outlet for our overflowing enthusiasm for cooking. When we discover delicious new ways to eat veggies, we’d shamelessly share them: Quinoa is delicious in tacos! Sweet potatoes are delicious topped with salsa! And still today: There’s nothing we love more than the delicious new way to eat healthy. Our new tip? Strawberries in the oven! Toasting brings out an even sweeter flavor, and they’re delicious over yogurt or perfect with whipped cream.

When we started A Couple Cooks, we discovered a blog called Naturally Ella. Like us, the author was passionate about cooking healthy vegetarian recipes. Her name was Erin and we began corresponding via email. She lived not far away in Illinois. She asked if she could come to visit. We agreed, even though we had never met in real life.

Luckily we got along wonderfully with Erin! Since then she has become a very dear friend. We just received Erin’s new cookbook, Simple vegetarian cuisinewhere this delicious Baked Strawberries recipe came from! The book offers 50 basic recipes for vegetarian cuisine, each with four seasonal variations. It’s a great concept and a fantastic way to learn about seasonal, plant-based eating.

How to bake strawberries

Why bake strawberries? Baking the strawberries brings out a nice sweet, tender richness that you don’t get in a crisp, fresh berry. It’s also great if you have berries that aren’t very sweet or are a bit past their peak. How do you cook strawberries in the oven?

  • Preheat oven to 375 degrees.
  • Place the strawberries on a baking sheet lined with parchment paper and toast for 20 minutes until soft.
  • Drizzle with maple syrup or honey to taste.

It turns out that roasted strawberries are an amazing flavor treat! This recipe is absolutely perfect with fresh, ripe local berries. They are served in a breakfast parfait with yogurt and pecan granola. Since we’ve always loved Erin’s cereal recipes (she brought some for us on that first visit and they’re quickly gone!) and the baked strawberries sounded intriguing, we thought we’d give it a try. This Baked Strawberries recipe makes this delicious berry even sweeter and juicier! Serve with yogurt and muesli for breakfast or whipped cream for dessert.


For the pecan granola

  • 2 cups oatmeal
  • 1 cup Pieces of pecans
  • ⅛ teaspoon kosher salt
  • ¼ cup maple syrup
  • ¼ cup nuts or olive oil
  • ½ teaspoon vanilla extract

For the roasted strawberries

  • 2 cups strawberries
  • 1 tbsp honey or maple syrup
  • 2 cups Plain whole milk yogurt or Greek yogurt for serving

  1. If used, prepare the muesli: Preheat oven to 300F. In a bowl, combine 2 cups rolled oats, 1 cup pecans, and ⅛ teaspoon salt. In another bowl, whisk together ¼ cup maple syrup, ¼ cup oil, and ½ teaspoon vanilla extract. Pour into the oat mixture and stir until the oats are well coated. Spread the oats in an even layer on a baking sheet lined with parchment paper. Bake for 40 to 50 minutes, turning the pan halfway through. The granola should be golden and starting to brown around the edges. Remove the pan from the oven and let it cool completely on the pan. When the granola has cooled, break it into pieces and store in an airtight container at room temperature for up to 1 week.
  2. Roast strawberries: Preheat the oven to 375F. Quarter the strawberries. Place the strawberries in a roasting pan lined with parchment paper and bake for 20 minutes. Mix with honey and let cool.
  3. Surcharge: Add the roasted strawberries to the yoghurt. Taste the yogurt and add extra honey if desired. Divide between 2 bowls and finish with ¼ cup of granola for each bowl.
