Some of you may be surprised to see a non-veg recipe on this blog. And for good reason: in 4 years of blogging, we’ve only posted a handful of fish or seafood recipes. When we switched to a whole plant-based diet 6 years ago, we drastically reduced the amount of meat in our diets, but we didn’t eliminate it completely. It’s a pretty confusing concept for most people who look at us quizzically when we say, “We’re flexitarians!” Read on for this baked shrimp recipe and more on how to be a flexitarian.

What is flexitarianism?

Which does ______________ mean flexitarian mean? For us, that means eating mostly vegetarian or vegan, especially when it comes to the recipes we cook at home. However, on our trips or on special occasions, we take the opportunity to eat meat when we feel like it. In general, we try to choose locally farmed meats or sustainable seafood where available.

We created this concept because we love the freedom it entails. In the book we read that inspired us to eat this way (Food Matters), the author (Mark Bittman) intrigued us by urging readers to reduce meat consumption by making a – or eat meatless twice a week. Our health would benefit, the environment would benefit (using fewer resources and not supporting factory farming), And We wouldn’t have to go cold turkey and instantly turn into hippie granola guys. We tried it, loved it, and decided to include a mostly plant-based diet in our daily diet.

It’s a moderate way to approach food, and we love it. We also use this moderate concept to eat “all natural” foods and sweets (although most of the time we stick to all natural foods because they taste so good). And you, how do you feel about eating?

We adapted this recipe for baked shrimp from our friend Annie’s Eats. It’s simple, direct and delicious. We love the combination of Mediterranean flavors of feta, garlic and parsley. If you can and your budget allows, find quality wild shrimp. Healthy Baked Shrimp recipe is really easy to make. Cook a simple tomato sauce with onions and garlic, then add the shrimp and cook until pink and tender. Garnish with a squeeze of lemon and a sprinkling of fresh parsley!

This Baked Shrimp recipe is incredibly delicious and easy to make. The prawns are cooked in a Mediterranean tomato sauce and sprinkled with feta and parsley.


  • 1 medium yellow onion
  • 2 Garlic cloves
  • 1 tbsp olive oil
  • 281 ounce fire roasted diced tomatoes
  • ¼ cup fresh parsley, chopped
  • 1 Pounds raw medium shrimp, shelled, deveined and shelled (thawed if frozen)
  • 2/3 cup crumbled feta cheese
  • ½ teaspoon kosher salt
  • Ground fresh pepper
  • lemon

  1. Preheat oven to 425°F.
  2. Finely chop the onion. Chop the garlic.
  3. In a large ovenproof skillet, heat the olive oil over medium-high heat. Add the onion and cook until soft, 3 to 5 minutes. Add garlic and cook until fragrant, about 30 seconds longer. Add the tomatoes and bring to a boil. Reduce the heat and let the sauce simmer for 5-8 minutes until the juice thickens a bit.
  4. While the veggies are cooking, chop ¼ cup fresh parsley.
  5. Remove the sauce from the heat and stir in the parsley, shrimp, feta cheese, kosher salt, and a few fresh peppercorns.
  6. Place pan in oven and bake until shrimp are cooked through, about 8 to 10 minutes. Garnish with fresh parsley and a squeeze of lemon juice. Serve immediately with bread, rice, quinoa or couscous.
