First, why we are better together

These baked gnocchi are a recipe I brought to a potluck for a group I co-founded called Indy Women in Food. We created this group under the concept: we are better together. It’s a group of female food entrepreneurs in Indianapolis. Instead of competing with each other, the purpose of the group is to elevate each other. We encourage each other, share our successes and work on projects of shared passion. In short, the group exists to practice abundance in action. And you know what? Being around others with the abundance mentality makes it 100% easier to mirror it yourself.

The world of food blogging is another place where abundance is part of the culture. Instead of competitive thinkingwe are better togetheris the mantra of this community. Food bloggers and food influencers are some of the most generous and encouraging people I know. So it’s fitting that this baked gnocchi recipe is in honor of a virtual pumpkin party! Sara from Cake Over Steak organized over 90 blogs to post new pumpkin recipes on the same day. Celebrating each other’s work and platforms: This is abundance in action. How to make gnocchi in the oven

Sometimes you come across things that are better than you expected. These Baked Gnocchi with Pumpkin Sauce turned out way better than we expected. Of course Alex and I support all the recipes we post here! But this one has become a favorite by far. Sticky gnocchi in a savory pumpkin sauce with creamy goat cheese pockets are like a cozy fall hug. We eat bites off the pan after we thought we were done.

These baked gnocchi are made with wrapped gnocchi for ease of preparation: and these days you can find really good wrapped gnocchi at the grocery store. Of course you can also create your own if you want!

Here are the main steps to making gnocchi in the oven (see full recipe below):

  • Prepare the pumpkin sauce: chop the garlic, heat the olive oil in a pan. Sauté the garlic for 1-2 minutes, then carefully add the canned pumpkin puree, vegetable stock, chilli powder, nutmeg, salt and pepper. Simmer for about 10 to 15 minutes until the sauce thickens. Then add some Greek yogurt.
  • Meanwhile, in a large saucepan of boiling salted water, cook the gnocchi until they float, about 2 to 3 minutes.
  • Place the gnocchi and pumpkin pasta sauce in a casserole dish. Garnish with goat cheese and thinly sliced fresh sage. Cook for 15 minutes until hot and bubbly.

We hope you find it as delicious and comfortable as we do. It’s perfect as a fall dinner or even a vegetarian Thanksgiving main course.

What can I substitute for goat cheese?

Goat cheese plays a big part in this recipe. But if you’re not a goat cheese fan, fear not! You can substitute other cheeses in this recipe. For this use of goat cheese, we would use shredded fresh mozzarella: it would then become gooey when cooked the same way as goat cheese.

Another option would be ricotta cheese: however, we would season it with a little salt and pepper first as it has a much milder flavor than goat cheese. Or try our Easy Creamy Gnocchi recipe instead, which uses Pecorino Romano cheese.

Is Goat Cheese Healthy?

You may be wondering if goat cheese is healthy? Or at least better for you than cow cheese? Goat cheese has several advantages over traditional cow cheeses like cheddar or mozzarella. goat cheese:

  • Contains more vitamins and minerals than cow cheese. Goat’s milk contains more essential nutrients than cow’s milk (such as vitamins A and B, calcium, iron, magnesium and potassium).
  • Contains slightly fewer calories than cow cheese. Goat cheese has only 75 calories per ounce, which is fewer than cow cheeses like mozzarella (85), Swiss (108), and cheddar (115).
  • Is easier to digest. Goat’s cheese contains less lactose than cow’s milk and has a slightly different protein structure. This means that even people with repeated lactose intolerance can digest goat cheese.
