Baked Bananas with Toasted Coconut

Here’s a quick and easy dessert: maple baked bananas with crunchy toasted coconut. Serve with Greek vanilla yogurt or vanilla ice cream!

Bananas are a pretty far cry from Indiana produce, but there’s not much fresh local fruit in the middle of winter. While we like to work with local produce, we also keep the balance with something less local. So we found tropical products to make this delicious baked banana recipe — and it paid off! We topped it with toasted coconut and creamy Greek yogurt.

How to bake bananas

These baked bananas are delicious and pretty easy: It really is as easy as making foil bags and popping them in the oven. Here are the basic steps for cooking bananas:

  1. Preheat the oven to 400F.
  2. Halve the bananas and cut into pieces of about 3 cm. Place them on a square of aluminum foil. Drizzle with maple syrup, drizzle with butter and sprinkle with some cinnamon.
  3. Fold the foil into a bundle. Cook until tender, about 12 minutes.

You can use this free method anytime you want to bake bananas — and serve them however you like! Below are some topping ideas.

How to serve bananas in the oven

In this recipe, we paired them with crunchy toasted coconut, which we simply toasted in a dry pan for a few minutes until golden brown.

For a creamy element, we mixed a vanilla Greek yoghurt with some maple syrup and vanilla. Drizzled over cooked bananas, it tastes almost decadent. It’s a great gluten-free choice, and it’s also naturally sweet. For a vegan version, you can use vegan vanilla ice cream or coconut whipped cream! We also have some great whipped cream recipes that would work well: our plain whipped cream, our yogurt whipped cream, or our coconut whipped cream.

And of course, what baked bananas wouldn’t taste even better with a drizzle of chocolate? And you can add crushed pecans, walnuts or peanuts and chocolate chips or chocolate shavings. A drizzle of caramel would be fabulous too!

Here’s a tip for preparation: If we’ve prepared the packets for these cooked bananas before our guests arrive. Then we threw them in the oven before tasting them at the end of the meal.

For the cooked bananas

  • 4 bananas
  • 4 tablespoons maple syrup
  • 2 tablespoons butter or coconut oil
  • 1 teaspoon Cinammon
  • Kosher salt

Serve

  • ¼ cup grated coconut
  • 7 ounces Greek yogurt (alternatively coconut whipped cream or vegan vanilla ice cream)
  • 1 tbsp maple syrup
  • ¼ teaspoon vanilla extract

  1. Preheat oven to 400°F.
  2. For the cooked bananas: Halve the bananas lengthwise, then cut into pieces about 3cm in size. Place the pieces of each banana on a piece of aluminum foil. Sprinkle each bunch of bananas with 1 tablespoon maple syrup, ½ tablespoon butter, ¼ teaspoon cinnamon (sprinkle evenly with your fingers), and a pinch of kosher salt. Fold the top of each piece of foil and the sides to create a packet. Place the papillotes in the oven and cook for 12 minutes.
  3. For the toasted coconut: Meanwhile, in a small, dry skillet, toast the shredded coconut for a few minutes, stirring constantly, until golden. When the coconut begins to brown, remove from the heat and continue stirring, being careful as it burns quite easily.
  4. For the vanilla yogurt (optional): Prepare the vanilla yogurt by mixing together the Greek yogurt, 1 tablespoon maple syrup, and the vanilla.
  5. To serve, place the cooked bananas in serving bowls. Top with a dollop of vanilla yogurt (or coconut whipped cream or vanilla ice cream) and toasted coconut.
