Beyond the norm, what makes this avocado toast easy? Poached Eggs with Turmeric! What is a turmeric egg? It’s a poached egg with turmeric mixed with water. The result is a beautiful bright yellow ball that looks infinitely more exciting than a regular poached egg! Making a turmeric egg only takes a few minutes, but it’s a lovely addition to anything: avocado toast, a bowl of cereal, or a large salad. How to make turmeric eggs:

  • Bring water to a boil in a large saucepan, then add 2 teaspoons of turmeric and a dash of white vinegar. Reduce to low heat.
  • In a small bowl, crack an egg and then slide it into the water. Do the same with the next egg, simmer for 3 minutes.
  • Using a slotted spoon, place the eggs on a plate lined with kitchen paper. That’s it! Beautifully shiny light yellow turmeric eggs.

  • Use good bread. Do not use stale bread for this. A slice of crusty artisan bread is key. Buy it in store or use our Homemade Sourdough Bread, Artisan Dutch Oven Bread or Multigrain Artisan Bread.
  • Garnish with julienned radishes for color. Add radishes cut into long, thin sticks for a sprinkle of colorful confetti.
  • Sprinkle with black sesame seeds and sea salt. As a final detail, black sesame seeds are an elegant garnish.

For the poached egg with turmeric*

  • ¼ cup distilled white vinegar
  • 2 teaspoons ground turmeric
  • 2 Big Eggs

For the avocado toast

  • 2 thick slices of artisan bread or homemade bread
  • 1 Lawyer
  • 1 at 2 radish
  • Black Sesame Seeds
  • coarse sea salt

  1. Pour a few inches of water into a large saucepan and bring to a boil. Reduce heat to low and stir in vinegar and turmeric.
  2. In a small bowl, crack an egg and then gently slide it into the water. Wait about 30 seconds and then add the next egg. Simmer until the whites are set but the yolks are runny, about 3 minutes.
  3. Line a plate with a paper towel. Remove the eggs from the pan with a slotted spoon and drain them while you make the toast. (Be careful with the turmeric water throughout the process as it may stain clothing.)
  4. Remove the stone from the avocado, peel it and mash it with a fork with a little salt. Spread on the bread slices, then sprinkle with egg, radishes, sesame seeds and sea salt.
