No matter how many new recipes we find, Alex and we always need easier lunch ideas to keep things fresh. Here’s an easy sandwich recipe we both love: ours The ultimate avocado sandwich, aka the Avocado Club! Contrary to what you might think, simply slapping an avocado on a sandwich isn’t as tasty as it sounds. Alex and I had many substandard veggie sandwiches that weren’t filling or hearty. So we created this avocado club: fuller umami Taste and so satisfying that it surprised us both. The combination of smoky, rich, savory, crunchy and salty is so irresistible…you’ll want to start all over again once it’s gone.

What makes this avocado sandwich the ultimate sandwich? Well, often veggie sandwiches consist only of crunchy veggies and no salty elements, making them crunchy and unsatisfying. This Avocado Club combines the best of savory and rich flavors into one killer sandwich. Here’s what you need:

  • Bread: Hearty wholemeal bread with lots of nuts and seeds is delicious, or you can bake artisan bread or sourdough bread
  • Lawyer: Of course, make sure it’s perfectly ripe before trying this sandwich.
  • Tomato & Lettuce: Ditto: make sure it’s ripe and juicy. When it’s out of season, tomatoes grown in a hydroponic greenhouse have the best flavor.
  • Mayonnaise: Mayonnaise adds massive savory flavor and moisture to the sandwich: don’t skip it! Use vegan mayonnaise if needed.
  • Cheese: Use both cheddar and provolone for contrasting color and flavor.
  • Coconut Bacon (or Bacon): The best part! The coconut bacon is so smoky and flavorful you’ll forget it’s a vegetarian sandwich (see below). Or you can use regular bacon if it’s part of your diet.

Put it all together and you have a Sammie so flavorful and delicious you’ll want to eat it over and over again. (At least we have!)

How to cut an avocado… for sure!

You’ve heard those stories of people cutting their hands trying to cut an avocado? Don’t worry: there is a safe way to cut an avocado and remove the stone. After learning this trick, we’ve used it countless times to make our favorite avocado recipes. Here’s what you need to know (or watch this video):

  1. Cut in half : Using a large chef’s knife, slice lengthwise around the avocado. Twist the two halves to separate them.
  2. Remove the core: Take a towel and put the avocado on it. In one smooth but quick motion, smash the knife into the pit of the avocado, then twist to remove.
  3. Safely remove the knife core: Don’t try to remove the pit from the avocado by hand! Instead, pull the cutting board close to your body, then place the core against the back edge of the cutting board and pull back to free it from the knife. (Check out the video for this part!)
  4. Remove from the skin and cut into slices: Use a large spoon to scoop the avocado out of the skin. Place the avocado cut-side down and slice.

The Flavor Maker: Coconut Bacon (or use default)

We eat vegetarian or plant-based most of the time here, so we have a few tricks up our sleeves for adding some savory bacon flavor. There are three different ways to make vegan bacon, and any would work well in this sandwich! Here’s a little breakdown of vegan bacon types, with coconut bacon being the top choice here:

  • Coconut Bacon: It’s easy to make with big coconut flakes and flavors surprised. You can barely detect any coconut flavor: it’s hearty and smoky, with a nice crunch. Head over to this Coconut Bacon Recipe.
  • Bacon Shiitake: You can also make bacon with shiitake mushrooms! It’s incredibly tasty but lacks the crunchy texture contrast. But if you prefer, head over to the Shiitake Bacon recipe.
  • Bacon Tempeh: Another option is to use tempeh, a pressed soy cake that provides a more textured alternative to tofu. We use it in our vegan BLT and it would be great here. Go to Tempeh Bacon Recipe.

Variations on this avocado sandwich

If you’re not in the club sandwich mood for the avocado sandwich, there are plenty of variations! Overall, we like to add savory and flavorful ingredients to keep the sandwich satisfying. Here are some other flavors that pair well with avocado:

  • Cream Cheese or Goat Cheese: Replace cheese slices with cream cheese.
  • Hummus: Fancy a vegan avocado sandwich? Hummus brings salty notes that can substitute for cheese. (Go for the hummus sandwich.)
  • Avocado Egg Sandwich: Add a fried egg or chopped hard boiled egg to make an avocado and egg sandwich. (Go for the pesto breakfast sandwich and add avocado.)

  • 1 a handful of coconut bacon (or cooked bacon)
  • 4 slices of bread
  • 1 Lawyer
  • 1 big ripe tomato
  • mayonnaise
  • 4 large leaf romaine lettuce
  • 1 Slice of cheddar cheese
  • 1 Slice the provolone cheese

  1. Make the coconut bacon ahead of time and store in the freezer until ready to serve (no thawing required). Otherwise cook the bacon.
  2. Toast the bread (optional but recommended).
  3. Slice avocado and slice tomatoes. Sprinkle the tomato slices with a pinch of salt.
  4. Spread the bread on both sides with mayonnaise. Top the bottom slice of bread with cheddar and provolone cheese, then tomato slices and avocado slices. Sprinkle with coconut bacon and romaine lettuce. Add the other slice of bread and serve.
