Apples, pears and pumpkins pop up at our farmers markets. I have to admit I haven’t quite caught up with fall yet as we still have tons of basil and another round of ripening tomatoes in our garden. However, Alex and I couldn’t resist such a bounty! We went for this pear and apple salad with a spicy curry vinaigrette: and man, was it worth it. The dressing is so unique you’ll want to try it on everything!

What’s in this apple and pear salad?

What could be nicer than biting into the sweet crunch of a raw apple? Rather than cooking the apples we bought at the farmer’s market, we like to showcase raw apples in salads. This apple and pear salad has a very special component: a curry dressing. It’s the star of the show, and you’ll want to put it on all of your salads! It’s incredibly easy to make and adds flavor to the salad.

The subtle flavor of the curry dressing was the perfect highlight for the sweet apples and pears. To add another touch to a real curry we added a few golden grapes for another sweet article. Golden raisins are sometimes used in curries or savory chutneys to add sweetness. Then for a bit of crunch, a few sunflower seeds (pumpkin seeds) or nuts.

How to make curry dressing

For the curry dressing, simply mix white wine vinegar, curry powder, some maple syrup to sweeten the taste, and salt. Then whisk in the olive oil, 1 tablespoon at a time, until a creamy emulsion forms. It’s important to slowly incorporate the olive oil so that the vinaigrette is emulsified, otherwise it will tend to separate into the oil and vinegar.

Fry nuggets at home

We can usually find toasted and salted nuggets at our local grocery store, and they make a great addition to salads for their texture and salty flavor. If you can’t find any roasted pumpkin seeds, you can roast them in a pan: Here’s how:

  • Place the pumpkin seeds in a dry skillet over medium-high heat.
  • Grill for about 3 minutes, shaking the pan and watching constantly to make sure they don’t burn.

For the curry vinaigrette

  • 2 tablespoons white wine vinegar
  • 1 teaspoon curry powder
  • ½ teaspoon maple syrup (or honey)
  • ¼ teaspoon kosher salt
  • 6 tablespoons olive oil

For the apple and pear salad

  • 1 Apple
  • 1 Pear
  • 6 cups green salad
  • 3 tablespoons salted toasted pumpkin seeds or walnuts
  • 3 tablespoons golden grapes

  1. In a medium bowl, whisk together white vinegar, curry powder, maple syrup, and kosher salt. Then gradually whisk in the olive oil, 1 tablespoon at a time, until a creamy emulsion forms.
  2. Core the application and the pear and cut into thin slices. Wash lettuce leaves.
  3. Arrange lettuce leaves on plates; Garnish with apple and pear slices and sprinkle with golden raisins and pumpkin seeds. Drizzle with curry vinaigrette.
