Want oatmeal for breakfast but get out the door? Bake a batch of these Apple Oatmeal Muffins! Alex and I weren’t muffins. You see They see: Most muffins are just an excuse to eat cake for breakfast. To the right? They’re loaded with lots of sugar and all-purpose flour: which in itself isn’t bad, but leads to a big crash a few hours later! If you’re like me, you might want to save your sugar and flour for dessert instead. (Like this decadent chocolate cake.) Breakfast is all about hearty, healthy choices—that’s where these Apple Oatmeal Muffins come in!

Apple and Oatmeal Muffins

What’s the secret? Oatmeal + Oatmeal.

So what’s the secret to making apple oatmeal muffins healthy and breakfast friendly? Oats. oatmeal ! Instead of all-purpose flour, use a mixture of rolled oats and rolled oats. And while they’re not as fluffy as a standard muffin, the texture is nice and moist and perfectly flavored! Cinnamon and allspice are the perfect combination with the sweet and tart apple. And instead of sugar, we used maple syrup: it’s a sweeter sweetener and makes refined sugar cheaper.

How do you make oatmeal? It’s pretty easy to find oatmeal at the store these days. But Alex and I never buy it because we like to make it at home! It’s that easy if you have a food processor or high-speed blender. That’s how it’s done:

  • Place 1 cup of oatmeal in a high speed blender or food processor.
  • Turn it on and blend for a few minutes until ground into a fine flour! 1 cup of oats makes 1 cup of rolled oats. (Yes, it’s 1 for 1.)

Instructions for making oatmeal and apple muffins

Not much technique is required to make these Apple Oatmeal Muffins. If you’ve ever made a muffin, pancake, or waffle, you know the process: dry mix, wet mix, combine. Then bake! Here are some additional notes about this apple oatmeal muffin recipe:

  • Use organic apples whenever possible. Apples are one of the best products to buy organic. This is a great place to use them! (PS, head over to our apple recipes for more ways to use them.)
  • For vegans, use a flaxseed egg. This oatmeal muffin recipe is dairy free. If you want to make it completely vegan and plant-based, you can also use a flaxseed egg instead of the egg.
  • Use any neutral oil as the oil. We love using oil in muffins because it’s easier than melting butter or coconut oil (yes, we’re lazy!). You can use grape seeds, sunflower or greens here. You can also use melted coconut oil and if you eat dairy you can use butter for a tastier taste.

Eat oatmeal for breakfast on the go? Try these Apple Oatmeal Muffins, made with oatmeal and maple syrup (not flour!).


  • 1 ½ cups Oatmeal OR rolled oats, processed in a food processor to a flour consistency (see below)
  • 1 cup oatmeal
  • 1½ teaspoons Cinammon
  • ½ teaspoon pimento
  • ½ teaspoon ground nutmeg
  • 2½ teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1 cup Milk (dairy-free, for dairy-free), room temperature
  • 1 egg, room temperature
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract
  • ½ cup neutral oil (sunflower, vegetable or grapeseed oil)
  • 1 cup apple cubes (1 medium apple)

  1. Preheat the oven to 350F. Place muffin cases in a 12 cup muffin pan.
  2. For the oatmeal, place 1 ½ cups of oatmeal in a food processor and blend very finely. (Note: DO NOT attempt this with steel-cut oats as they are very different in texture from rolled oats!)
  3. In a medium bowl, whisk together rolled oats, rolled oats, cinnamon, allspice, nutmeg, baking soda, and kosher salt.
  4. In another bowl, mix together the milk, egg, maple syrup and vanilla, then gradually add the oil.
  5. Mix the wet ingredients with the dry ingredients until smooth. Let sit for 10 minutes while the oatmeal rehydrates.
  6. Meanwhile, dice the apple. After 10 minutes carefully fold the apples into the batter. Then use a ¼ cup spoon to scoop the batter into the prepared muffin pan.
  7. Bake for 20-25 minutes until risen and golden brown.
