Alex, Larson and I recently came home with a huge bag of apples after an afternoon of drinking cider slushies and romping around the local orchard. what to do with them After making apple crumble, applesauce, and apple pie, we stopped for a breather. How about… apple muffins? Fortunately, these turned out unbelievable. The streusel topping adds a sweet bite to every bite: and they have a healthy twist, too. Our son Larson literally swallows them! Here’s how to make them.

Why make these apple muffins? The Sprinkles.

These apple muffins are really a twist on our healthy pumpkin muffins recipe (and these banana muffins are similar!). This recipe had the original streusel topping, a crunchy filling made with glittery turbinado sugar and some butter and rolled oats. The beauty of a streusel topping is that it adds just the right amount of sweetness to each bite instead of having to add a load of sugar to the muffin batter itself. And there’s something about that crunch… well, you have to try that for yourself!

The apple muffin rotation uses cinnamon, ginger, and allspice as flavors. It also includes both applesauce in batter and diced apple pieces. The diced apple can be optional if you prefer, but it adds another nice texture. (To be fair, our son Larson picked them and ate the rest of the muffin: to each their own!)

Do you want to add style? Drizzle with our icing sugar for 1 minute. (Of course, that negates the audio part…!)

Are These Apple Muffins Really Healthy?

For us the term in good health Apple muffins can be used here. While definitely not a health food because of the sugar, these muffins are still healthier than the standard muffins.   • Less than 200 calories. Our main calorie goal for “healthy” was for each muffin to be under 200 calories.
  • Just sweet enough. These muffins have just enough sugar, a little more than our typical muffin but still less than the standard. They are sweetened with maple syrup, which gives a more mellow sweetness than refined sugar.
  • Nutritious ingredients. Flour and sugar are balanced with heart-healthy oats, applesauce, and fresh apples.

What’s the best way to store these apple muffins? The texture of the sprinkles can be slightly lost depending on how they are stored. Here is our recommendation:

  • Once: Place the muffins on a wire rack and cover with a clean, dry kitchen towel. This keeps the crispy crumble topping intact.
  • Up to 4 days: Place a paper towel at the bottom of an airtight container, place the muffins in, and line a paper towel on top. Paper towels will absorb moisture, which will keep the crispy topping in place.
  • More than 4 days: Freeze these apple muffins in an airtight container and store for up to 3 months.

  • 1 ½ cups plus 2 tablespoons all-purpose flour, divided
  • ¾ cup Oatmeal, divided
  • 1 tbsp cinnamon, shared
  • 1 teaspoon Ginger
  • 1 teaspoon pimento
  • 2 teaspoons baking powder
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • ½ cup maple syrup
  • 1 ¼ cup applesauce
  • 1 cup apple cubes (1 medium apple)
  • ¼ cup unsalted butter, melted
  • 1 tbsp vanilla extract
  • ¼ cup turbo sugar
  • ¼ cup salted butter, cold and cut into small pieces

  1. Preheat the oven to 350 degrees Fahrenheit. Place 12 muffin cases in a muffin tin.
  2. In a medium bowl, combine 1 ½ cups all-purpose flour, ½ cup rolled oats, and 2 teaspoons cinnamon with ginger, allspice, baking soda, baking soda, and kosher salt.
  3. In another bowl, combine maple syrup, applesauce, unsalted butter (melted), and vanilla.
  4. Combine the wet ingredients with the dry ingredients and stir until a smooth paste forms. Mix in the diced apples.
  5. In another medium bowl, add the remaining ¼ cup rolled oats, 2 tablespoons flour, and 1 teaspoon cinnamon along with the turbinado sugar and salted butter (cut into small pieces). Using a pastry blender or fork, cut the butter into the remaining ingredients until evenly mixed and a crumbly crumble topping forms.
  6. Divide the batter evenly among the muffin cups. Then cover with a thin layer of sprinkles.
  7. Bake until a toothpick comes out clean (if your oven is uneven, turn the pan halfway through), about 25 to 30 minutes. Allow to cool in the pan for 5 minutes, then remove the muffins and transfer to a cooling rack to cool completely.
