How to make the perfect emulsion

Storage of apple cider vinegar dressing

You can store homemade apple cider vinegar dressing in the fridge for up to 2 weeks. Technically, you can store at room temperature, but because of the Dijon mustard in the dressing, we recommend refrigerating.

Point: Be sure to bring the chilled dressing to room temperature before serving! The oil will solidify in the fridge. All you have to do is let it sit at room temperature until it’s liquid again, then shake it a few times before serving.

  • 2 tablespoons Apple Cider Vinegar
  • 1 tbsp Dijon mustard
  • ⅛ teaspoon ground ginger
  • ⅛ teaspoon kosher salt
  • 6 tablespoons Extra virgin olive oil

  1. In a medium bowl, whisk together maple syrup, apple cider vinegar, Dijon mustard, ground ginger, and kosher salt.
  2. Slowly stir in the olive oil, 1 tablespoon at a time, until fully mixed and an emulsion forms. The dressing can be kept in the fridge for up to 2 weeks. Before serving, let sit on the counter for a few minutes to reach room temperature and shake well before serving.
