There’s nothing quite like eating off a stick, right? Here’s an easy party appetizer that benefits from this idea: Antipasti skewers! That’s all there is to an antipasti platter in the form of skewers. Thread olives, mozzarella, marinated artichokes and tortellini pasta onto a skewer and it’s easily devoured by eaters of all ages. It’s perfect for parties, baby or bridal showers, summer BBQs…even as an easy dinner recipe. Skewers to the rescue!

Ingredients for antipasti skewers

Antipasti is the first course of an Italian meal: like an appetizer or an appetizer. Antipasti is singular and antipasti plural for more than one dish (e.g. “We had some antipasti to start the meal.”) Typical antipasti that can be enjoyed in Italy: cold cuts such as prosciutto and salami, olives, fine cheese, pickled vegetables, peperoncini and mushrooms.

These antipasti skewers take the elements of an antipasti bowl and thread them onto a skewer. This makes an easy party appetizer. They are customizable to your taste in antipasti. What you need to thread skewers:

  • Tortelloni pasta, also known as large tortellini, sold in refrigerated aisle packs. It’s a larger pasta shape than tortellini with a stuffed center (this is important for kebabs!).
  • Fresh mozzarella balls: also known as Cilegine
  • cherry tomatoes
  • Fresh basil leaves
  • Marinated artichoke hearts in a jar: marinated have a lot of flavor but you can use them neat if you like
  • hard cheeselike Provolone, Asiago Pressato, Pepper Jack, Gouda, Fontina or another cheese (optional)
  • Castelvetrano olives or other bland black or green olives
  • pepper: Use small peppers like peperoncini or roasted pepper slices

Tips for preparing antipasti skewers

Antipasto skewers are as simple as threading ingredients onto skewers. But there are a few tips to make these skewers a success:

  • Season the tortellini and mozzarella. These two ingredients can taste natural on their own. Add olive oil, vinegar and a few spices (see recipe below) before threading onto skewers to bring out the flavors.
  • Thread the ingredients in the order of your choice. Make them all the same or vary the ingredients! We like to make them all different for some variety. But if you like symmetry, you can make them all the same.

Variations and Substitutions

The good thing about antipasti skewers? They are so customizable! You can use any ingredients you like. The most obvious variant is the addition of dried meat. Here are some other ideas for things to add:

Antipasti skewers are perfect for parties and look great on a buffet table. You can leave the skewers at room temperature for up to 2 hours, then be sure to refrigerate them for the cheese.

You can store leftover skewers in the fridge for a few days, but keep in mind that basil can darken over time. Skip basil when preparing and refrigerate 1 day before serving. If made with basil, cook up to 3 hours before serving.

Antipasti Skewers are a fun and easy party appetizer! Prepare them for a crowd and adjust the ingredients as you like.


For the skewers

  • 9 ounces Chilled Cheese Tortelloni Pasta*
  • 16 small balls of fresh mozzarella (Ciliegine), drained
  • 16 cherry tomatoes
  • 16 fresh basil leaves
  • 16 marinated artichoke hearts in a jar
  • 8th at 16 Hard cheese cubes like Provolone, Asiago Pressato, Pepper Jack, Gouda, Fontina or another cheese (optional)
  • 16 Castelvetrano olives (or other sweet green or black olives)
  • 8th small whole peppers in a jar or 16 roasted red pepper slices

For seasoning

  • 1½ tablespoons olive oil
  • 1 tbsp white wine vinegar
  • ½ tbsp Italian spice
  • ¼ teaspoon garlic powder
  • ½ teaspoon kosher salt

  1. Boil a large pot of well-salted water. Cook the pasta according to package directions until al dente (usually about 2 minutes). Drain the noodles and pour cold water over them until hot.
  2. Put the pasta with the mozzarella balls (drained) in a bowl. Stir in olive oil, Italian seasonings, garlic powder, and kosher salt.
  3. Thread one on each skewer: seasoned tortellini pasta, mozzarella, cherry tomato, basil leaf, artichoke heart, hard cheese, olives and pepper. Serve immediately. Keeps at room temperature for up to 2 hours, refrigerate leftovers. If making ahead, prepare up to 3 hours ahead (or 1 day ahead without fresh basil).

Remarks

*Tortellini are large tortellini that you can find in the refrigerated section: it is a larger dough shape than cored tortellini. It is more suitable for doner kebabs, since regular tortellini are too small and have a hole in the middle.
