Alex and I have used this trick time and time again to whip up quick dinners: and it works for lunch and breakfast, too. This is on our list of the most important things every chef should know!

  • 4 eggs
  • ½ tbsp chili powder
  • ½ tbsp garlic powder
  • ½ tbsp cumin
  • ¼ teaspoon kosher salt
  • ½ tbsp olive oil
  • 4 Taco-sized flour tortillas or corn tortillas
  • Pico de gallo or fresh salsa
  • 1 a handful of chopped red onion
  • Torn coriander leaves
  • Hot sauce

  1. In a medium bowl, whisk the 4 eggs. Add chili powder, garlic powder, cumin, and kosher salt and stir until well combined.
  2. Heat the olive oil in a pan. Add eggs and cook over medium-low heat, scraping eggs as eggs set, about 3 to 4 minutes total. When scraped, they begin to form into a meat-like texture. Don’t scratch too much or you’ll make pieces that are too small: just enough to come together!
