It all started with a challenge from my sister. I asked her what kind of recipes she would like to see next from A Couple Cooks. And she asked, “Can you make a 5-minute dinner recipe?” Of course, that got our wheels spinning. Because the recipes we keep getting asked aren’t how to make the best chocolate cake or the best chocolate chip cookies. No, the question we are asked again and again is: What are your best quick dinner ideas?

Since Alex and I often make tacos or quesadillas for an easy weeknight dinner, we decided to make a taco. And for the filling? The Chorizo-style eggs in our Veggie Burrito Bowl regularly receives rave reviews. Whisking cumin, chili powder, and garlic powder in scrambled eggs and cooking over low heat magically forms a meaty substance that we often make. So why not use it as a taco filling? We made a batch and served my sister our 5 minute tacos.

That’s a good question. 5 minutes is pretty ambitious, isn’t it? Our Answer: Yes, these tacos are ready in 5 minutes. Alex tried as a speed demon and succeeded! But here’s what you need to remove it in 5 minutes:

  • A quick cook who feels confident in the kitchen
  • No toddler interrupts things!
  • Memorize the recipe before you start (we made it easy to remember by using ½ tablespoon of all the spices and olive oil)

Depending on your environment, it may take 5-10 minutes to complete this recipe. Anyway: This is one of the quickest dinner ideas you will ever make.

What are Chorizo-Style Eggs?

The filling for these quick tacos is called chorizo-style eggs. What is that? Is there chorizo? No way! This quick dinner idea is vegetarian and eggs replace the meat. Adding some magical spices to eggs really makes them taste – and look – meaty! The texture is oddly similar to meat: but it’s just eggs. We stumbled upon this trick last year and use it all the time. This is how it works:

  • Whisk 4 eggs.
  • Mix together equal parts chili powder, garlic powder, and cumin: we used ½ tablespoon each for easy memorization. These savory spices are reminiscent of the taste of meat, especially the combination of garlic and cumin.
  • Heat a drizzle of olive oil over medium-low heat, then add the eggs. Wait a few seconds while they begin to set, then begin scraping them into soft folds. When scraped, they begin to form into a meat-like texture. Don’t scratch too much or you’ll make pieces that are too small: just enough to come together! This process only takes a few minutes.
  • Hop in a taco and enjoy!

How do you keep tortillas warm?

Finally, let’s talk about keeping the tortillas warm! A warm tortilla is key to a great taco. We typically heat our tortillas over a gas flame on the stovetop (see Reheating Tortillas). You can do this in this recipe while you are cooking the eggs. Or you can skip it if you’re just trying to get dinner on the table quickly! Tortillas begin to cool as soon as they are turned off, so they can become brittle in minutes. Fortunately, there is an invention to this problem that is inexpensive and does the job.

It is a tortilla warmer! Alex and I couldn’t think of a better way to keep our tortillas warm. It’s basically an insulated pouch that traps heat and keeps you perfectly warm. You definitely don’t need one for this recipe, but we love having one in our household when we eat tacos here!

  • 4 eggs
  • ½ tbsp chili powder
  • ½ tbsp garlic powder
  • ½ tbsp cumin
  • ¼ teaspoon kosher salt
  • ½ tbsp olive oil
  • 4 Taco-sized tortillas or 8th mini tortillas
  • Bought salsa fresca or pico de gallo
  • 1 a handful of chopped red onion
  • Torn coriander leaves
  • Hot sauce

  1. In a medium bowl, whisk the 4 eggs. Add chili powder, garlic powder, cumin, and kosher salt and stir until well combined.
  2. Heat the olive oil in a pan. Add eggs and cook over medium-low heat, scraping eggs as eggs set, about 3 to 4 minutes total. When scraped, they begin to form into a meat-like texture. Don’t scratch too much or you’ll make pieces that are too small: just enough to come together!
  3. If time permits, warm and char the tortillas by placing them over an open gas flame over medium-high heat for a few seconds on each side, turning with tongs until lightly charred and warmed through. (See Reheating Tortillas.)
  4. Garnish with salsa fresca (drain excess liquid before serving), sliced ​​red onions, shredded cilantro leaves, and hot sauce.
