In almost 8 years of A Couple Cooks we have never created anything 5 minute recipes. Because on the one hand, calling something a 5-minute recipe can seem silly and trivial, the complete opposite of our pretty simple philosophy. Cooking takes time and it’s worth it. On the other hand, this breakfast sandwich totally deserves the nickname 5 Minute Recipe because it’s really quick. It’s hardly a recipe, but we’re posting it because if you’re like us, you always need creative ideas in the kitchen. With that in mind, we have a healthy 5-minute breakfast — yes, 5 minutes really — for you on those days when you need a quick fix.

Add this to your 5 minute recipes! This healthy breakfast with pesto takes minutes to make and offers a delicious breakfast twist.


  • 1 teaspoon olive oil
  • 1 egg
  • 1 English multigrain muffin
  • 2 at 3 tbsp high-quality basil pesto, bought or homemade according to season (alternatively vegan cashew pesto)
  • 1 a handful of baby arugula (or other baby lettuce)
  • Kosher salt

  1. Heat 1 tbsp olive oil in a pan over medium heat. Crack the egg into the pan and sprinkle with a few pinches of kosher salt. When the egg whites are almost done after a minute or two, turn and cook for another 30 seconds, then remove from the heat.
  2. Meanwhile, toast the English muffin. Spread the pesto generously on both sides. When the egg is cooked, slide it over one half of the English muffin.
  3. Add a handful of arugula to the still-hot pan and return to medium-high heat; Add a pinch of kosher salt and cook for a few seconds until tender. Remove from the heat and place the arugula on top of the egg.
  4. Top the sandwich with the other half of the English muffin and serve immediately.
