Waldorf salad is very popular here, especially in the fall when apples and walnuts are in season. It’s especially popular around the holidays, gracing many Thanksgiving and holiday spreads.
The original Waldorf salad recipe
According to the American Century Cookbook, the first Waldorf salad was created in New York City in 1893 by Oscar Tschirky, the maître d’hôtel at the Waldorf Astoria.
The original recipe was just diced red-skinned apples, celery, and mayonnaise. Chopped walnuts were later added to this now American classic.
Mayo or yoghurt with the Waldorf salad?
Some prefer their Waldorf salad with yoghurt instead of mayo. I usually stick with the mayonnaise stock (that’s what we use in this recipe), but you can substitute yogurt for the mayo if you prefer. In this case, you may need to add some honey to offset the extra acidity of the yogurt.

How long does Waldorf lettuce keep?
For the freshest, crispest salad, prepare Waldorf Salad no more than an hour before serving and refrigerate until ready to serve. Refrigerate leftovers for a day; The apples may brown a little and the salad may be watery, but it will still be enjoyable.

You can serve the whole salad on a bed of fresh lettuce, but if you want to serve individual servings of Waldorf salad, try these presentations.

Waldorf Salad
If using yogurt, omit the lemon juice. You can also add some honey to balance the acidity of the yogurt.
Some of our longtime readers prefer to omit the salt, but we like the way it balances out the sweetness of the apples and grapes.

Make the dressing:
In a medium bowl, whisk together the mayonnaise (or yogurt), lemon juice, salt, and pepper.
Add apple, celery, grapes and walnuts:Stir the apple, celery, grapes and walnuts into the bowl with the dressing.
