Composed salad with grilled chicken breast, avocado, apple, mango and dried cranberries.

Like Chicken Caesar, Cobb salad is one of those staple salads that you can find on pretty much any American restaurant menu.

It’s a “composed” salad with avocados, bacon, chicken, hard-boiled eggs, and tomatoes.

This was the dilemma we found ourselves in during a recent trip to Washington DC when we wanted a rich salad for dinner but without all that bacon.

We found a great solution at the Hard Rock Cafe in DC in the form of their “Anti-Cobb” salad. Instead of bacon, eggs, and tomatoes, the Hard Rock salad included mango, sliced ​​apple, and dried cranberries.

Perfect!

The recipe below is based on this salad and is intended as a guide rather than an exact recipe. I didn’t include quantities because it really depends on how much you want to make and how much of one of the ingredients you want in the salad.

ingredients

  • Romaine lettuce, chopped crosswise into 1-inch strips (or favorite lettuce)

  • Grilled skinless, boneless, chopped chicken breast

  • Mango, peeled and chopped (see Slicing Mango)

  • Avocado, pitted, peeled, chopped (see Slicing and Peeling Avocado)

  • Sour apple, peeled and sliced

  • Dried cranberries

  • vinaigrette or your favorite salad dressing

  • The Hard Rock Cafe Anti-Cobb Salad also has strawberries and excellent chunks of orange.

method

  1. Arrange the salad on a serving plate. Arrange the other ingredients in sections on the salad. Drizzle over the salad dressing of your choice.
