What is tzatziki?
Tzatziki is a simple Greek salad made with cucumber, yogurt, dill, salt and pepper that is a great accompaniment to spicy dishes. This is where we cut the cucumbers and keep them bite-sized. If you cut or dice the cucumber very small and add the garlic and lemon, tzatziki becomes more of a sauce that’s commonly used on gyros and kebabs.

2 cucumberspeeled, quartered lengthways, then sliced

1 Cup Natural yoghurt

1 teaspoon dried dill, or a few teaspoons of fresh dill

Try the pickles:
Taste the pickles first to make sure they aren’t bitter. Depending on the type of cucumber you use and many other factors, you may find a cucumber with a distinctly bitter taste.
In this case, soak the cucumber slices in salted water for half an hour or more until the bitterness subsides, then rinse and drain before using.

For the salad, simply mix the ingredients together gently. salt and pepper to taste.
