Turkey Waldorf Salad is a twist on the classic Waldorf. It’s filled with leftover turkey, apples, pecans, cranberries, and a honey mayo sour cream dressing.
When it comes to planning a holiday party, our family tends to have bigger eyes than stomachs, and you? I don’t know how we do it every year, but together with my parents we produce twice as much food as we need!
Of course, the benefit of going overboard is days of light cooking duties because of all the leftovers.
The salad comes together quickly with a sweet and tangy honey mayo sour cream dressing.
Turkey Waldorf Salad
ingredients
Dressing:

1/4 Cup mayonnaise

1/4 Cup sour cream (or Greek yogurt)

1 tablespoon Apple Cider Vinegar

1 tablespoon honey
Salad:

2 cups (or Greek yogurt) turkey breast

2 big red applescored and chopped

1 1/2 cups cut celery
-
1/2 Cup lightly toasted pecansroughly chopped

1/2 Cup dried sweetened cranberries

2 green onionsfinely chopped white and green parts (about 1/4 cup)

1/2 teaspoon chopped fresh thyme

Make the dressing:
Whisk together the mayonnaise, sour cream, apple cider vinegar, and honey.

Mix the dressing carefully with the salad ingredients:
Place the salad ingredients – cooked turkey, chopped apple, celery, pecans, dried cranberries, spring onion – in a large bowl. Gently fold in the dressing.
Refrigerate until ready to serve. Can be prepared up to 2 hours before serving.
