What to do with all that leftover turkey?

We decided to make turkey stroganoff with some of us. Stroganoff is a classic Russian dish that became popular in America after World War II and usually features beef and mushrooms served in a sour cream sauce.

If you don’t have extra Thanksgiving turkey, you can make turkey stroganoff with ground turkey. Just use our Ground Beef Stroganoff recipe and substitute ground turkey for the ground beef.

ingredients

  • Salt, taste (You will need more salt than expected)

  • 8th ounces egg noodlescooked

  • 8th ounces button or Cremini mushroomscut

  • 3 tablespoon butter

  • 1/2 Cup finely chopped Onion

  • 2 cups rest cooked turkey meatcut into bite-sized pieces

  • 1/2 Cup left over turkey sauce (or chicken or turkey stock)

  • 1/8 teaspoon nutmeg

  • 1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme (important, do not omit)

  • 1 Cup sour cream at room temperature (can substitute regular, full-fat yogurt)

  • Black pepper, taste

method

  1. Cook pasta:

    Bring a pot of salted water to a boil and cook the noodles according to package directions.

  2. Fry mushrooms:

    Meanwhile, heat a large skillet over medium-high heat for 1 minute. Add the mushrooms and sauté dry (cook without oil), shaking the pan frequently to keep them from sticking, for 3 to 5 minutes until the mushrooms shed their water and begin to brown.

  3. Cooking onions in butter:

    Add the butter and onion and sauté, stirring occasionally, until the onions begin to brown, about 4 minutes. Sprinkle salt over everything.

  4. Add the turkey and spices:

    Add the turkey and sauce and stir to combine. Cook for a minute or two and sprinkle over the thyme, black pepper, and nutmeg.

  5. Add the sour cream:

    Turn off the heat and add the sour cream. You may want to add a few tablespoons of water to thin the sauce. Thoroughly stir in the sour cream. Do not let the sauce simmer or boil or it may curdle!

    Adjust the spices to your liking. Depending on how salty your sauce was, you may need to add salt. More than you think.

    Serve immediately over egg noodles.
