Tomatoes on Toast

Every year we get a little bit better at growing tomatoes.

The first few seasons I tried gardening the yield was pretty pathetic. Over the years I’ve learned that you need plenty of sun, deep watering but not overwatering, soil prepared with compost, and a good mulch cover.

This year we finally found that we need resistant hybrids, tomatoes that can fight Verticillium wilt, which is endemic to our soil.

So the celebrity variety, which is resistant to pretty much anything, went into the ground and I am happy to report that we are having a bumper crop of excellent tasting tomatoes.

So much so that we’re a bit overloaded at the moment. What to do when you have an abundance of garden tomatoes?

Well, my dad likes to make tomato juice and I’ve spent the last few days canning tomato salsa. This snack I’ve made a few times over the past week is a winner!

So easy. It’s just toast, spread with Boursin herb cheese, topped with sliced ​​fresh garden tomatoes and sprinkled with coarse salt and freshly ground black pepper.

At the local market we get freshly baked French and Italian breads from La Brea Bakery, which of course makes a difference. You want toast that will stand up to the tomato and won’t just collapse once it touches something wet.

We happen to have Boursin in the fridge, but you can use any spreadable cheese, like goat cheese mixed with some chopped herbs.

Simply! And insanely good.

If you don’t have Boursin cheese, you can use goat cheese with some chopped fresh herbs. The Boursin is easiest to spread after it has been left at room temperature for about 10 minutes.

ingredients

  • 2 to 4 slices of French or Italian bread

  • Herb Boursin Cheese, about 2 tbsp per slice of bread

  • 1 medium to large vine ripened tomato

  • Coarse salt (like fleur de sel or just kosher salt)

  • Freshly ground black pepper

method

  1. toast bread

  2. While the bread is toasting, cut the tomato into 1/4-inch slices.

  3. Once the bread is lightly toasted, spread Boursin cheese on one side. Top with a few tomato slices, overlapping if necessary. Sprinkle with coarse salt and freshly ground black pepper.

    Eat immediately.
