It’s turkey season and this week we’ve been experimenting with different ways to make a turkey and cranberry sandwich – grilled, plain, toasted, with cream cheese, with Gruyere, etc. in our what-have-we-have-for-lunch test kitchen.

Roasted Turkey Cranberry Arugula Sandwich

ingredients

  • 2 slices of French or Italian bread, lightly toasted

  • 1 1/2 teaspoons mayonnaise

  • 1/2 teaspoon Dijon mustard

  • Several slices of cooked turkey breast

  • 2 tablespoons prepared cranberry sauce or cranberry relish

  • 1 handful of baby arugula leaves or watercress

method

  1. Toast 2 slices of bread.

  2. Spread mustard on one slice and mayonnaise on the other.

  3. Add the turkey breast to the slice with mustard, then the cranberry sauce and then the rocket leaves.

  4. Cover with the other slice of bread.

  5. Cut in half.
