Mwah hah hah! (Insert your favorite wicked laugh here.) Do you like cinnamon toast? These jack-o-lantern snacks are the yam Halloween version of cinnamon toast. They start out like baked sweet potato fries, then are dipped in melted butter and dipped in cinnamon sugar. That’s it! Sweet Potatoes, Butter, Cinnamon, Sugar.

Make sure you have plenty of kids to eat them up or you’ll find yourself munching them all (not that that ever happens here, right).

Following these directions, we’ll coat the entire sweet potato round with butter and cinnamon sugar. For a lighter version, simply brush melted butter on one side of the sweet potato slices and dip just that side in cinnamon sugar.

Parents, when making this recipe with children, cutting out the eyes and mouth is difficult and should be done by an adult. Otherwise just skip it.

  • One 1 1/2 to 2 pound sweet potato, if possible in an even cylindrical shape wide enough for your cookie cutter to cut out patterns

  • 3 tbsp butter, melted (for dipping)

  • 6 tablespoons white granulated sugar (for dredging)

  • 1 teaspoon ground cinnamon

method

  3. Melt the butter either on the stovetop or in the microwave and place in a small bowl. Mix the sugar and cinnamon in a separate bowl.

  4. Dip each round of sweet potatoes in melted butter. Then place the round in the cinnamon sugar to coat the jack-o’-lanterns in cinnamon sugar. Place the circles on a wire rack over a baking sheet to dry.
