Strawberry Guacamole
Strawberry Guacamole

Strawberry Guacamole! Chunky avocado guacamole with the tart-sweet juiciness of strawberries.

Here’s an easy way to spice up your guacamole game – throw in some chopped fresh strawberries!

The sweet and tart pieces of fruit harmonize wonderfully with the creamy, salty avocado puree.

In addition to the strawberries in this guacamole, I also added some chopped dried cranberries to boost the sweetness. You can skip them if you like (if you prefer Paleo) and just stick with the strawberries.

Just try it on the go! A good guacamole is all about the balance of flavors and textures — creamy, tart, tangy, salty, and in this case, sweet too.

We intentionally left out chiles from this guacamole, but feel free to add some if you want the spiciness! Just a serrano or half a ground jalapeño will do.

ingredients

  • 2 ripe avocados, peeled and pitted (see Slicing and Peeling an Avocado)

  • 1/2 teaspoon salt

  • 1 tbsp lime or lemon juice

  • 1/4 cup chopped red onion

  • 1 cup chopped pitted strawberries

  • 1/4 cup chopped sweetened dried cranberries (omit for paleo version)

  • 2 tbsp chopped cilantro (optional)

method

  1. Puree the avocado:

Mash the flesh of two avocados with a fork. Don’t overdo it, the guacamole should have some texture.

  2. Add lime juice, salt, onion, strawberries, dried cranberries, cilantro:

Stir in the lime juice and salt. Stir in the red onion, chopped dried cranberries, and most of the strawberries (reserve a few chopped strawberries for topping).

  3. Season to taste with salt and lime juice:

Salt and lime juice to taste and adjust as needed. Guacamole is all about balancing the creamy flesh of the avocado with the acidity in the lime and the salt.

  4. Top with more strawberries:

Serve garnished with the remaining chopped strawberries. Serve with tortilla chips

To store, cover with cling film to prevent air from getting into the guacamole and refrigerate until ready to serve.
