Easy to make frozen yogurt recipe with fresh strawberries. Lighter than ice cream but still creamy and packed with strawberry flavor.

When fresh strawberries come into season and we can get them for just a few bucks, that’s when we start looking for anything and everything related to them.

This frozen strawberry yogurt is a great way to take advantage of the abundance of the season. And as the days get warmer, it’s a great way to cool off quickly.

It’s best to eat it the same day you make it, as it will get icy if left in the freezer for more than 8 hours. If you want it to last longer and not get icy, add a tablespoon of vodka or kirsch to the mixture just before stirring.

ingredients

  • 3 cups hulled chopped fresh strawberries

  • 3 tbsp lemon juice

  • 2/3 cup to 1 cup sugar (depending on how sweet you want the result to be and how sweet your strawberries are to start with)

  • 1/4 teaspoon salt

  • 1/2 cup whole milk

  • 1 1/2 cups full-fat yogurt (if using low-fat or non-fat, add 2 tablespoons heavy cream)

method

  1. Cooking strawberries with lemon juice, salt, sugar and puree:

    Place strawberries, lemon juice, salt, and sugar in a medium saucepan. Heat over medium heat, stirring, until the sugar has completely dissolved.

    Use a potato masher to mash the strawberries while the mixture heats.

    Once all the sugar has completely dissolved, remove from heat and let sit for 10 minutes.

  2. Stir in milk and yoghurt, then chill:

    Stir in milk and yogurt until fully incorporated. Place the mixture in the refrigerator and chill until completely cold for at least an hour, preferably several hours before proceeding.

  3. Processing in the ice cream machine:

    Process the mixture in your ice cream maker for 20 to 25 minutes. Eat immediately or store in the freezer until ready to serve.
