How do you know your green beans are fresh? Break one in half. It should “snap into place”. If it bends limp like a rubber band, it’s not fresh. Only buy fresh.

These stir-fries are quick to make, with onions, ginger and garlic and a sauce of sweetened soy sauce with sesame oil. It couldn’t be easier!

Just make sure you use fresh and tender beans. (Older, tougher beans won’t cook enough in the time it takes to make this stir-fry.)

This recipe results in green beans that still have some crunch. If you’d like your beans to be more cooked, blanch them in boiling water first for a minute or two, then rinse with cold water to stop the cooking, and then pat dry with paper towels before tossing Add the beans to the hot pan and oil.

Due to the short cooking time, this recipe is best made with fresh beans (the ones that shatter if you break them in half).

  • 2 to 3 tablespoon canola or peanut oil

  • 1/2 to 3/4 lb fresh, tender green beanscut into 1 1/2 to 2 inch pieces

  • 1 small Onion, sliced ​​root to stem (about 1 cup)

  • 1 (1-inch) piece fresh gingerpeeled and cut into matchsticks

  • 1 large clove garlicvery thinly sliced

  • 2 tablespoon soy sauce (use gluten free soy sauce for gluten free version)

  • 1 tablespoon sugar

  • 1 teaspoon toasted sesame oil

  1. Heat the oil in a wok until simmering hot:

    Heat a wok or large skillet over high heat on the hottest burner you have for about 90 seconds. Add the vegetable oil and let it heat until shimmering.

    (Throw a slice of onion in the oil if you think it’s hot. If the oil is hot enough, it will sizzle.)

  2. Add the vegetables:

    Add the green beans, onions and ginger and mix everything together. Break up any clumps of sliced ​​onions that may be sticking together.

    Spread everything in the pan and let it cook untouched for 30 to 90 seconds. You want to brown the vegetables a little. Stir the vegetables and let sit for another 30 to 90 seconds.

    Add the sliced ​​garlic, stir again and cook for another minute.

  3. Add the soy sauce mixture:

    Mix soy sauce and sugar and add to pan. Turn off the heat and immediately toss the veggies to combine. The sauce will begin to caramelize and may burn if you don’t keep stirring for a few seconds.

  4. Add the sesame oil and black pepper:

    Pour the sesame oil over the green beans and onions and sprinkle with black pepper. Throw again to combine.

    The beans should still be crunchy. They continue to cook in the residual heat of the pan or the serving plate.

  5. Serve beans:

    Serve immediately or allow to rest and serve at room temperature.
