It’s everything you love about wings, only in burger form! Spicy Buffalo Chicken Burgers have a secret to keeping them juicy and flavorful: shredded carrots and celery in the burger!

Buffalo chicken wings are one of my favorite snacks, but they’re not the first thing I want to make in the summer.

What is a Buffalo Chicken Burger?

The basics of this burger are simple – it starts with ground chicken, which is very lean.

To ensure the burgers don’t dry out, I like to mix in some grated celery and carrots, which compliments the classic buffalo sauce flavor combination. I also add some hot sauce straight to the patties for some extra flavor!

Grill them and serve them on a toasted bun with blue cheese sauce and they’re an instant summer classic!

Tips for grilling juicy chicken burgers

Believe it or not, it’s possible to grill a juicy chicken burger. You just have to pay attention to a few little things. I always take extra care not to overcook the chicken and add ingredients to keep the meat moist.

  • You don’t want to overcook your chicken burgers. Using a thermometer, cook to an internal temperature of 165°F.
  • To keep the burgers from sticking, use a fairly high heat grill and rub the grates with some oil before grilling. It also ensures you get a nice crust and some grill marks on the patties. Turn once halfway through cooking.

The best way to top a spicy buffalo burger

The burgers themselves are delicious and I’d stick with the recipe, but feel free to change up the toppings! Here are a few ideas:

  • Blue cheese and sautéed mushrooms
  • Crispy fried jalapenos and ripe avocado slices
  • Shredded Celery and Carrot Salad
  • Crispy bacon with ripe tomatoes

Can you do these in advance?

You can easily prepare the patties a day in advance. They keep well together in the fridge. Make the patties, place them in a single layer on a plate and cover with plastic wrap. Throw them on the grill when they’re done.

What to serve with Buffalo Chicken Burgers

I like to serve these burgers with a large side of chopped celery and carrots to kill off the heat from the burgers. You can also serve them with a great side salad or even something like french fries!

Prepare the blue cheese sauce before assembling and grilling your burgers. The sauce can be made up to a week in advance and stored in the refrigerator. Make a double batch if you like and dip in veggies or drizzle over steak as well.

For the burgers

  • 1 lb ground chicken

  • 1/2 Cup Panko bread crumbs

  • 2 tablespoon grated carrot

  • 2 tablespoon grated celery

  • 2 tablespoon Frank’s hot sauceplus extra for serving

  • 1/2 teaspoon kosher salt

  • 1/2 teaspoon granulated garlic

  • 1/4 teaspoon black pepper

  • 4 Potato Hamburger pastries

method

  1. Shape burgers:

    In a large bowl, combine the ground beef, breadcrumbs, carrots, celery, hot sauce, salt, garlic, and black pepper. Shape the mixture into four patties of the same size. They should be about 1/2 inch thick.

  2. Preheat grill and rub with oil:

    For direct heat grilling, preheat the grill by setting gas burners to medium-high or distributing charcoal to create direct heat under the cooking grates. The temperature should be 450-500˚F.

    To make sure the burgers aren’t sticking, dip a kitchen towel or some paper towels in oil and quickly rub down the cooking grates with tongs. Alternatively, spray the grates with spray oil, but watch out for flare-ups.

  3. Grill burgers:

    Grill the buffalo chicken burgers about 4-5 minutes per side or until they reach at least 165°F in the center of the burgers.

    Chicken burgers are easy to overcook. The instant read thermometer really helps you find the sweet spot of fully cooked but still tender and juicy meat. Finished burgers have grill marks on both sides and are pressure resistant.

  4. Grill buns:

    Place buns on grill next to burger and grill for 30 seconds. Optionally, you can brush the buns with a little butter or oil, but you don’t have to.

  5. Serve burgers:

    Serve the burgers on grilled potato buns with butter lettuce, blue cheese sauce and an extra drizzle of Frank’s Hot Sauce.

  6. Leftovers and storage:

    Leftover buffalo chicken burgers will keep in the fridge for up to 3-4 days. They reheat really well in the microwave on high for 1 minute.
