Delicious soba noodle salad made with buckwheat soba noodles, mango, red bell pepper, garlic, basil, mint, peanuts, lime and sesame oil.

The compliments Elise and I gave to this salad are plentiful. Really, this is a wonderful spring and summer salad with Asian inspiration.

What are soba noodles?

Soba noodles, in case you don’t know them, are thin Japanese noodles made from buckwheat flour that are often served cold. Soba noodles can be found in the Asian aisle of many markets; They have a nice body and an earthy, old-fashioned flavor.

In this pasta salad, mango, mint, and various other flavors contrast and pair well, giving a good balance to the whole salad.

You can make this dish a few hours in advance or even the night before and let the soba cool and marinate. Just be sure to add the peanuts, mint, and basil just before serving.

ingredients

  • 6 tablespoons seasoned rice vinegar

  • 1 tablespoon of sugar

  • 1/4 teaspoon salt

  • 1 large clove of garlic, chopped

  • 1 1/2 tablespoons fresh lime juice

  • zest of a lime

  • 1 1/2 teaspoons dark sesame oil

  • 6 ounces soba noodles

  • 1/2 large red bell pepper, chopped

  • 1 small ripe mango, peeled and diced

  • 1/2 cup thinly sliced ​​fresh basil

  • 1/2 cup thinly sliced ​​fresh mint

  • 1/2 cup chopped roasted salted peanuts

method

  1. Make the dressing:

    Heat the rice vinegar, sugar, and salt in a saucepan over medium-high heat until the sugar and salt are dissolved, 1-2 minutes. Stir in the garlic and let cool. Add lime juice, lime zest and sesame oil and mix well.

  2. Cook pasta:

    Cook noodles in salted water according to package directions al dente. Then drain and rinse well under cold water. Place the noodles in a large bowl and toss with the dressing.

  3. Combine:

    Add the mango, peppers, basil and mint. toss and plate Serve sprinkled with chopped peanuts.
