Snow Peas with Pine Nuts and Mint

Snow peas lightly sautéed and tossed with toasted pine nuts, mint, garlic, olive oil and sesame oil.

Spring has sprung here in Northern California. The sweet peas are blooming, the sweet peas are climbing and I’ve got peas on my mind!

Today I had a craving for snow peas and cooked a bunch this afternoon just for fun. There are so many ways to cook snow peas, the one thing you really don’t want to do is overcook them.

This is an easy stir fry with pine nuts, garlic, sesame oil and some mint. What is your favorite snow pea recipe?

ingredients

  • 2 tablespoons extra virgin olive oil

  • 1/2 pound snow peas, rinsed, dried, tips trimmed, strings removed

  • 1/4 cup pine nuts

  • 1 garlic clove, chopped

  • 1/4 teaspoon dark sesame oil

  • 10 large mint leaves, chopped

method

  1. Sauté snow peas, garlic, pine nuts:

    Heat olive oil in a large skillet over medium-high heat. Add snow peas, garlic and pine nuts. Stir to coat with the oil. Cook for 1-2 minutes while stirring.

    You don’t want to overcook the snow peas or they will go limp. They should still be a little crispy.

  2. Remove from stove. Stir in sesame oil and chopped mint leaves:

    Serve immediately.
