Smashed New Potatoes with Garlic and Chives

Smashed New Potatoes! Oven fried in butter, mashed with garlic and chopped chives.

Okay, sometimes “mashed” potatoes are just considered a lazy way to make mashed potatoes. And in fact, they take a lot less effort.

But mashing potatoes is also a great way to get butter and herbs into every nook and cranny of the potato while preserving the potato’s texture. New spring potatoes make a great mash, as do buttery Yukon Golds.

In this recipe, you essentially bake them in a pot in the oven. The potatoes cook in their own moisture while being bathed in butter. Baking them in a pot keeps them from drying out too much to batter easily, but keeps them dry enough to fluff well.

ingredients

  • 1 to 2 lb new potatoes or Yukon Gold

  • 3 tablespoon unsalted butter

  • Salt

  • 1 clove garlicchopped

  • 1 to 2 tablespoon chives or scallion greens, chopped

method

  1. Bake Potatoes:

    Preheat oven to 350°F. Place the potatoes in a medium ovenproof saucepan (with a lid) and add about 1 tablespoon of the butter, cut into chunks. Bake covered in the oven for 20 minutes.

  2. Brush potatoes with butter, salt, back in the oven:

    Take out the potatoes and toss them together so they are coated in butter. Sprinkle potatoes with salt. Return to the oven, cover and cook an additional 45 minutes to an hour, depending on the size of the potatoes.

  3. Test for degree of doneness:

    To test doneness, poke a potato with a fork. If the fork goes in easily, they’re done.

  4. Mash with potato masher, toss with garlic and butter:

    When the potatoes are nice and soft, remove the pan from the oven and mash each potato with a potato masher. Don’t smack them into oblivion, just crush them. Mix in the garlic and the remaining butter. Add more salt to taste.

    Scatter chives over the potatoes to serve.
