Skillet Tortilla Pizza

Super easy custom pizzas made with flour tortillas, mozzarella, tomato sauce and basil in a cast iron skillet on the stovetop.

When I was a kid, Home Ec was a required course in junior high and we all had to learn how to make English muffin pizzas in a toaster oven.

A cast iron skillet works best on the stovetop as it distributes heat more evenly and holds heat well. As soon as the tortilla is bubbling, first sprinkle the cheese on top and then spread with the sauce. This way the thin tortilla base stays rather crispy.

In this recipe we use the most basic ingredients – grated mozzarella, tomato sauce, basil.

But you can also use other popular pizza toppings like caramelized onions or basil pesto. Just use a light touch. The tortilla is thin and easy to weigh down.

ingredients

  • Flour tortillas (about 8 inches in diameter)

  • Grated mozzarella cheese

  • Tomato sauce

  • Fresh basil leaves, thinly sliced

method

  1. Heat the flour tortilla in the pan until it puffs up:

    Heat a large cast iron skillet or griddle over medium-high heat. Place a flour tortilla in the center of the pan.

    If the tortillas begin to puff up or form air bubbles, turn them over and turn the heat down to medium. Prick the air bubbles with the tip of a knife or the tines of a fork to deflate them slightly.

  2. Add toppings:

    Sprinkle the top of the tortilla with a thin layer of grated mozzarella cheese. Once the cheese is about half melted, apply a thin layer of tomato sauce and spread over the cheese with the back of a spoon. Sprinkle the top of the tomato sauce with a little more cheese.

  3. Remove from heat and cover to melt the cheese:

    Once the edges of the tortilla are browned, which indicates the bottom of the tortilla is getting a nice brown, remove the pan from the heat.

    Cover the top of the pan with a cover for about a minute, allowing the cheese on top to melt with the residual heat from the pan.

  4. Sprinkle with freshly chopped basil:

    Transfer to a plate and cut with a pizza wheel or sharp knife.

    Serve immediately.
